My father and grandfather were great cooks. And they like to make goat caldereta. Each of them has their own version. A stew version ang soupy version. Me, I cook it in the middle. I improvise it a bit. I put some grated cheese on top, turn off the heat and let it rest for 2 minutes. Note: we don’t use liver spread; upon cooking, we use dried bay leaves for aroma ❤
50 years of eating caldereta and I never seen anyone use so many different pans for cooking one dish. My wife uses only one pan. Oh your Tagalog is improving. In my 70's now and I still practice as I like to understand what is going on around me.
Hi Joey good day please try to cook "Calderetang Batangas... Few ingredients but flavourful. It can be beef, pork, goat meat or chicken. Sure you will like it .
My dad thought me, whenever I’m cooking something that uses garlic, onion or both, always start with them first in oil, then the other ingredients. Now that’s how I always cook. Looks bomb!
Love that you made my fave. If you wanna lift your recipe try marinating it in fish sauce, soy sauce, garlic powder and vinegar for 20 mins. Drain and pat dry with paper towels saving marinade mix for later. Brown beef and deglaze pan with a little beef stock, Verjus or red wine. Once all the meat and veg are browned stick it in a Dutch oven or slow cooker. I use a combo of tomato paste, marinade, whole canned tomatoes and beef stock. Long and slow for hours just makes it melt esp if you use a mix of beef ribs and chuck. The bones give it so much flavour. At the end when you add the liver spread add grated cheddar or Dutch cheese but my fave is using Pecorino Romano. Adjust to taste with a little Toyo and Patis and a non filo spice Smoked Paprika or Hungarian Paprika paste. I’ve spent years perfecting this recipe from various sites and my own intuition. I hope you like it and try it. Btw love you work and I’m glad someone else uses the air fryer for potatoes to reduce some of the cholesterol 😆😃🙏
Have you tried MENUDO and it taste good after a day or two and its best palaman for hot crispy pandesal… But if you don’t have hot pandesal you can try is with toast french bread 🥖 baguettes.
That version is OK... but if you want to try the traditional tagalog version; - use only duck or mutton/lamb instead of beef - add chopped sweet dill pickles - add roasted peanut paste (use food processor for convenience) - add laurel leaf
For me kaldereta should have chilli and coconut milk or full cream milk or cream, thats what make kaldereta different from sarciado/menudo/ and afritada. . . Its should be spicy little sweet from coconut and creamy That's how the kaldereta taste

I use liver spread in one of my versions of kaldereta. Also, I sometimes put some olives (bottled or fresh) as well as raisins.
