That pot/pan was really a good present. Plus, cooking with it makes you happy and content. I make ragu, chilli con carne, roasted vegetables with lentils or with different beans soup, etc etc, to parcel out for the freezer. Efficient meal prep and time well spent. Well done!

As a trained Chef in the USA , I would like to let you know that your pot is commonly referred to as a "stock pot", used for cooking bones (chicken or beef, etc.)) vegetables and water... and reducing it until you have a flavorfull broth.
Looks delicious. I add shredded carrot, shredded sweet potato and diced peppers to mine.

I’m so glad you’ve touched on the wee wee subject. I thought I was the only one with that problem. I’m 44 this year and I usually go to wee wee at night about 2-3 times, but sometimes even 4-5 times, depends on the night. And the same during the day. Like you, wherever I go, I have to wee just before, because I know very shortly I’d need to go again. And I do!! Maybe it’s the age, don’t know. I did have breast cancer 2 years ago and had all the treatments too plus I’m on Tamoxifen now, and I noticed it’s been worse since all this happened. So who knows whether it’s related or it’s purely just the age.

By the way, Diavola in italian means devil in English. It looked amazing. Mine is as well into spicy foods, everything spicy, he is even buying spices for himself!🤦♀️ I would be into patisseries as well. Yes, back home it was called the spring blues, just like the autumn blues. We are going home for Easter, but until then I am buying myself spring bulbs and I am bringing them in the house to look at them flowering, the daffodils out in the garden are in bloom, the spring is in the air and I am fighting to beat the blues. Been feeling the same lately; been seeing my Facebook memories pop up from year's past in Florida.
Usually would plan something to look forward to after Christmas.
Living in New England with the cold weather usually a few weeks in Miami laying in the sunshine would do .
Come home and mentally winter would be over in my mind.
Love the enormous pot; got one in my house with a large red lobster on it perfect size for that.

And I recognize your feelings, I've been feeling 'bleh' and bored myself, but then again it could be because of the constant rain we've been having.
I just made a big batch of a healthier version of caponata (without sugar and added garlic). Cooking really lifted my spirits but now i'm feeling 'bleh' again. So i suppose i should keep on cooking and meal prepping for the rest of the day as it really helps 😅.
Almond Powder/Flour I use for my Keto Pizza: 2.5 cups Almond Flour. Add to a bowl of 3 cups grated low-moisture Mozzarella, 1/4 cup mascarpone cheese (or cream cheese), and 2 eggs. Place on an oiled sheet in a 400F oven for 10-12 min. Add toppings and bake another 10-12.
