When I was young man I thought Cajun was spicy, then a friend of mine introduced me to authentic Szechwan cuisine. Her philosophy is if your not sweating your not eating! I love Szechwan cooking with pepto bismal for dessert to this very day now.
Sichuan is spicy, but authentic sichuan also uses sichuan peppercorns which numbs the palate. All of the authentic places I've been to it's much more about the sichuan peppercorns than capsaicin level.
Im also a spice lover, I can always order something spicy like hot pepper soup or spicy chicken. And I enjoyed eating cold food too like ice cream or sherbet.
I believe that the spicy taste is the same in all parts of the Earth and I agree that each part has its own spicy taste or technique, but the taste is still the same. By the way, I think that the spiciest in terms of taste and also in a matter of almost all recipes, is Mexico.
