As a knife maker one of the things I noticed right away, is that he wipes the blade after almost every cut. YOU KNOW! he is going to take care of it properly, and your work will be appreciated.
you can truly see how taro likes this knife… the little tappings before he cuts into the tuna and the admiring views everytime he wipes the blade after a cut… much respect to you Don!
My first chef was the man in the yellow beanie in the background. He started working with taro after the restaurant i worked with him at closed. Ive had some chances to meet taro, talking with taro breaths new life into our work. He always has managed to motivate me in ways im still gracious for.
Dunno where you found this bloke, but he's an original! I'm sort of reminiscing a bit watching his cutting style as there's an old friend of the family who was trained similarly and I really should get in contact with again one day soon. The sculptural qualities of that handle are superb though and you guys did a great job throwing together the overall video.
@@DonNguyenKnives short story, I had to move and don't have anywhere to setup shop anymore. Long story; wife had a brain aneurysm last year and isn't able to work. I was trying and sorta succeeding and finally picking up steam and selling a decent amount of knives. My landlord caught the greedy bug and evicted us so he can make more on rent in a year. It's left me having to storage everything till I can get sorted. I'm in a condo so idk when I'll get to return to making knives at this point.
@@Hal_bowman Damn dude, I'm very sorry to hear that. I hope your wife is okay, and one day you'll have some shop access again. Hang in there man, I'm wishing you the best

He's the best kind of customer any maker would want to be friends with.

Holy sh**!!! That handle is amazing 😲 wow!!!
Cool! New episode in the series. I thought episode 4 was the end.
It's technically the end of the "build" part, but this will be a nice conclusion.
Thanks!
Man, I can't make knives anymore. I got emotional watching him use it. Knowing I can't do that for people anymore apparently gets to me. Fuck
Do you mind if I asked what happened?

sorry was that Doi a Kenijiro or an Itsuo???!?!?
Knowing Taro, I'm THINKING it's from Keijiro Doi, and he also refers to it as the Papa Doi.
