Great job - I like this pickled shrimp recipe better than the others I'm seeing on youtube. I make pickled fish a lot and really want to try this. With the fennel and onions it becomes almost like a simple shrimp giardiniera!
Yes, because the shrimp is cooked before pickling it begins to break down after a couple days. It is technically preserved so it could go for longer but it really isn't nice to look at. Resembles a deep sea creature.
Absolutely, that's ceviche and it's a little different in that it typically is primarily citrus juice used to "cook" the seafood. Delicious either way!

I have seen other recepies call for using raw shrimp as they will " cook " in the acid.
