For all you non-seaplane pilots: it is perfectly normal to make curved takeoff paths from water. It’s a big advantage that seaplanes and flying boats have. It’s a matter of choosing the safest, obstacle-free pathway and not so much about crosswind!
Having only flown a seaplane a few times, I'm sure I'm not as qualified as you to judge the takeoff but it looked fine to me. Water doesn't restrict step turnes like wheels and a narrow runway.

He was totally fine just adjusting but i bet it freaked the pilot out hitting crosswind. It will everytime😊
