I love steak tartare! I make mine with round steak and I do use a food processor. I think it turns out fine. I don't use all those ingredients; just the steak, egg, onion, salt and pepper. I serve it on buttered Westphalian pumpernickel bread, topped with hollandaise sauce. Add a Caesar salad on the side, and you have a complete meal.

And by placing this in the refrigerator to chill the meat marinates like fish, shrimp or seafood in a cerviche? Does that still make this a tartare? Curious about the difference.
I doubt it was the Germans. Most Germans (way back then) would not eat beef or any meat raw. Until quite recently, their cuisine is known for their roasted/stewed meat, potatoes and cabbage, all cooked til "done". Most likely, it was the French.

WTAF! Egg yolks, raw! Chicken or duck egg yolk are great. The meat should be pure fillet, no fat, only highly intensely flavoured meat. Your local butcher will prepare and grind it for you. There are a few ingredients missing here, and the blending of the ingredients is off. If you really want truffle (and is a nice addition), at least use a few light shavings of pure truffle over the top! I can be honest here because I am a retired chef who worked under the like of Paul Bocuse, Anton Mossiman and the like.
