    I make big batches of navy bean and ham soup, split pea and ham soup, borscht, and chicken vegetable soup and portion the soups down and put in freezer. I also keep a few in the fridge .....in case I need a snack 😅😅😅

    I know this gave you a great sense of accomplishment Jaime!😍
    I always loved it when I had the completed meals cooling to put them in the freezer!😘
    It was always so comforting in knowing so many meals were ready for my lunches for several weeks!😚
    I used my crockpot, electric pressure cooker, electric skillet and stove when I was making all the meals.
    I used a little smaller containers for the lunches. They were square and held 2 cups. They were clear bottoms and I started with the red lids. As the number of lunches grew, so did the color of lids. I found blue, purple, green and turquoise lids that I used for other dishes. I never labeled mine since the different color lids indicated the different meals.
    I would put a 5 lb package of ground meat in the crockpot and just let it cook completely before I added any other ingredients.
    Of course I put frozen meat in the crockpot or pressure cooker to cook without thawing it first.
    I also liked using the electric skillet because it would maintain the temperature while cooking.
    But you learn many shortcuts when cooking in bulk and the process goes quicker after doing it for a while.
    I'm so glad you're doing this for some peace of mind and especially for those busy days when you don't have any spare time!
    Whenever I used rice in a dish that I was freezing, I would mix everything together before freezing it. Rice separates more and can get hard and dry but I found mixing it with the sauce or liquid in the dish gives it a better consistency when you heat it up. I would mix the pasta with the other ingredients too so everything is coated and protected from the frost. But you can try it both ways and see which you like better.
    One of my favorite meals was meatloaf and I would often make it with mashed potatoes and other vegetables. Sometimes I would make the meatloaf in a loaf pan and slice it for the freezer container. I also tried it in a muffin tin. The muffin tin works out if the container is tall enough to be able to put on the lid.
    There are a lot of pasta dishes you can make ahead and freeze! There are also dishes with a protein and vegetables that work well! There are so many possibilities to try!

    Looks great, I have found that if you add the sauce to the pasta in the pot and let it simmer for a few minutes, the pasta absorbs more flavor making it tastier and when you reheat, the consistency is better. Just my preference so wanted to share.

    Quick tip for next time - if you write on stuff with a permanent marker, you can wipe it off with some rubbing alcohol! That's how I like to label my freezer meals :)

      Unfortunately, no! I always put some on her plate along with a couple other things she likes. Eventually she'll branch out!

      Great question! I didn't calculate the sodium so I don't know for sure. You can enter the ingredients into a program like MyFitnessPal and it will calculate all the nutrients!
