Welcome back to our PAKISTANI FOOD SERIES from Northern Pakistan! Today we are exploring more of Hunza and all of its unique cuisine. We start the day at Serena Altit Fort Residence (huts situated on the foothills of Altit Fort) which have breathtaking views over Hunza Valley. We stopped into Khabasi Cafe, where female chefs run the show. We had a traditional Hunza breakfast: Giyaling (think wheat pancake) with local butter, honey and apricot jam. Apples were in season and we also ordered freshly squeezed apple juice, which was incredible!
After breakfast, we climbed up the hill to the ancient Altit Fort. The tower is approximately 1100 years old and our guide took us back in time with stories of what took place inside the fort and the surrounding village over the thousands of years it stood over Hunza. Altit Fort is one of the oldest monuments in Gilgit-Baltistan, and we highly recommend exploring it!
After climbing and exploring the fort, we made our way back to the Karimabad Bazaar. Here, there is a woman chef who was the first woman in Hunza to start a business. Her name is Lal Shehzadi, and you can’t miss her restaurant hut which is constantly packed with locals. Lal Shehzadi was kind enough to meet us and we had wonderful conversations. She is very passionate about clean, organic food and is an educator to the locals about good farming practices. She has even travelled to Japan (very long journey!) to expand her expertise on planting and harvesting from her garden.
Despite her positivity and passion for what she does, and despite the perpetual flow of hungry guests coming to eat her food, she spoke about the challenges she faced as a woman starting her own business and becoming a chef. Many told her to stay at home, that she shouldn’t work, and that she should always cover her head. Many of her peers doubted her ability to make her dream a reality. However, she remained strong and ambitious, and created one of the most famous restaurants in the area and her name and food remains legendary!
We ordered her famous Hunza dishes: Chap Shoro (which is a pan fried meat pie) and Burutz Berikutz (which is a fresh cheese chapati). Both dishes were made with only local, organic ingredients, including apricot and walnut oil which define the flavours of Hunza food. The food, although made with simple ingredients, was fantastic!!! You could taste that Lal Shehzadi puts love into every dish she makes and we feel so honoured to meet her and eat her amazing Hunza food.

So people of northern Pakistan Hunza eat paneer, yet when I ask Pakistanis from Lahore or Karachi about Paneer they have no idea what it is. Clearly this shows that people of Hunza, Chitral etc... Have ancient links with North Indians and Sanskrit/rig veda cultures.
The lady is really socially educated and have a great cooking sense. So good to see woman coming of her own that too from ever deprived yet beautiful region of Hunza in a backward, bankrupt yet terror state like Pakistan run by thugs.

I'm from Karachi Pakistan I went to hunza last year and I can say this for sure that her food was one of the best in hunza and there a guy who stall is right next to hers has one of the best dumplings

Yes it's because our areas in particular hunza and gilgit have highest literary rate which is 95% in whole of Pakistan, we have one of the lowest crime rates, we have more women into education system, in businesses and other fields in Pakistan. In hunza and gilgit children get yearly scholarships for studying abroad, mainly because the kids are seriously into education along with their parents who regard it as high. You will find atleast one women in every family who is atleast educated to bachelor or masters level. We are so proud of our culture and education and above all we don't leave our morals and ethics. That's exactly what they say about Northern Pakistan. You get to the north by flight (either Gilgit or Skardu) then hire a local driver to take you around.
People go by car in Pakistan it is worth it.You will enjoy much much more if you go by car. You will be pleased after seeing the beautiful stunning valleys which come on the way. Highly recommended
Sir if youy go by car, you should keep in mind that you may get bus sick along the long journey about 13-14 hours in a bus
You can go by car, bus or fly. The roads are very windy but scenic all the way. It does take 10+ hours on the road though. At time the roads are bumpy as well so find a comfortable ride. All the best. Pakistan is waiting
Btw Switzerland has nothing on the northern areas of Pakistan.
Skardu is also beautiful. I was there a month ago. Have some good videos of there. Basho Valley, Khaplu Valley, Upper Kachura Lake, Satpara Lake , Sarfaranga Desert, Katpana Cold Desert , Shigar Fort & old mosque, Deosai and more

Great work Luke! Just one small thing I have noticed a lot of UA-camrs in Pakistan get wrong. We Pakistanis don't refer to our bread/pita as Chapati ( that's an Indian bread). We call it "Roti" and the main difference is that our bread is generally thicker and bigger in comparison, hence the different name.

Roti is regular bread. Paratha is thick and oily, made for breakfast. Naan is the thickest bread. Chapati is thin and light. There's nothing Indian vs Pakistani about this. I grew up in Pakistan with all these different types of breads. Have you even lived in Pakistan?

Had her food in August this year. She is a really nice lady, and oh boy, her food is just amazing.
Great video! I enjoyed her story. The bread she made looks similar to a bread mentioned in a comic book I'm reading called "A brides story" by Kaoru Mori. HIGHLY recommend checking it out. It's a historical fiction set during the 18th century throughout the silk road regions. Trying to remember what they called that bread in the comic. But it had braided edges like hers.
Non/Nan. They are (probably pre turkic) Central Asian in origin and this region is near central Asia. Nan/Non on average get more elaborate the further North-West you go.
You know what, the silk route may be connected to northern Pakistan since China is right in the North of Pakistan and throughout history they were friends.
