- With Christmas just around the corner this chicken liver parfait with pear chutney dish is perfect to impress your guests.
Shopping List - makes 12-15 ptns
100gm finely diced onion
15gm chopped garlic
small bunch of thyme
150m brandy
350ml ruby port
400gm chicken livers + 30gm when cooked
5 medium size eggs
400gm melted unsalted butter
125gm double/heavy cream
Ciabatta for bruschetta
Salad leaves and dressing
Spiced pear chutney

The loaf tin in the video has 1/2 lb on it, I filled it with water which was 380ml, serves 4-6, hope that helps

Richard, I love me some classic French cooking and you cannot get more classic than chicken liver parfait. Your recipe is bang on as well, I was watching and nodding like an idiot, cant say how nice it is to see a parfait made so well mate.
You still have some really good habits like tin foil in your oven, I'm far too lazy for that nowadays.

Thanks Matt it’s one of my favourites and we always have it at Xmas, the chutney is a recipe that I pinched from la Gavaroche when I was doing a stage there back in the 90’s, i added star anise but it’s a cracking recipe, thanks for stopping by and the feedback, especially from a fellow chef
