Chef, Big fan mo ako from the North. Ang pag gawa ng Dinakdakan dito sa amin ay ganito.. ilaga ang pork with salt then ihaw, then slice. Maglagay ng salt, pamintang pino, calamansi juice. Mag hiwa ng maraming sibuyas, siling pang sigang, konting suka. Mix lang all together then saka mo ilagay yung utak ng baboy or mayonnaise.
One of my favorite pulutan dinakdakan! 😋 si Chef RV yung pambansang Chef na lahat ng recipe ay affordable, kung hindi afford yung ingredients meron syang pang alternative na ibang ingredients para sa recipe na niluluto nya ang mga linyahan ni chef na (kung saan ka masaya go! ikaw ang bahala kung saan ka sasaya! 😅)
Its an Illokano dish i want it broil n put vinegar salt pepper n sibuyas n dahon ng sibuyas. Thanks Chef RV im From La union n ilokano but a Canadian Citizen my best regards
I just made this last weekend haha. But I also didnt use utak. my dressing was mashed chicken liver then calamansi juice. its just as creamy as mayo but all natural. no soy sauce kasi binibigay ko na yun sa sisig, asin lang hahaha! Thanks to my kapatid for the recipe☺
As a ilocano, pisnge ng baboy is just a entender...when i was. A child my parents uses is liempo, dila ng baboy, pisnge and liver...just for me the texture is amazing...for ilocanos is may sarili clang rikado, at kht cnu pa kc nasa tao ung style of cooking and the taste... Un lang po

Actually,warek warek ang tawag nyan sa Nueva ecija. Utak ng baboy ang parang mayonnaise (not healthy) Pero masarap sya. Haven’t tried mayonnaise so try ko sya.

Kami po ay Ilokano Chef from San Francisco. My brother is a chef din in a Seafood Restaurant. One time he told me gagawa daw sya ng dinakdakan na inuulam namin tuwing Sunday after mass in the Philippines in my childhood. I told where are you getting the utak at pisngi. He also used mayonnaise to substitute the brain. Believe me he fooled all of us because appearance and taste was perfect. It really brought us all to the church❤🙏
