In this week's video we're using our homegrown heirloom corn and beans along with some ground venison and preserved garden veggies to make our favorite nachos!
I live north of you in Conneaut Lake, PA. I have tried to incorporate things you guys have done with your garden and food preparation in my daily life; I'm not the greatest at it but I keep on trying to make one or two changes each year to improve my health while making delicious food from things God has given us to use. I am trying the 3 sisters this year in hopes I can make my own tortillas and use the vegetables in soups and stews. I harvested black walnuts this year and gathered acorns to make my first acorn flour, both ideas I got from you guys. I also pre-ordered your book...I can't wait to get it! Thanks for all you do to help us all love great food from Mother Nature!
That's so great to hear! And yea, making a couple changes to improve each year is the way to go. That way you don't get overwhelmed trying to do everything perfect all at once and in a couple years, you'll be a pro :) And thank you for pre-ordering our book, we can't wait for you to read it!
I enjoy how as you add ingredients you play footage of harvesting and processing that ingredient. It really emphasizes that field to table vibe and is inspiring me to be more ambitious.

I'd love a tour of your new place! My hands get all cut up getting my dried corn off the cob. I bought a metal hand sheller, but also have seen a board with old fashioned nail spikes driven in at an angle with only the closely spaced grid of nail heads expose to run the dried cobs over, and I recently saw a more-than-cob-sized diameter hole cut into a plank with 4 nails driven into the hole from each of the sides that you can shove the cob into to strip off the kernels. It's so satisfying to grow, process, preserve, and cook your own food!
Yea there are some cool little jigs for removing the kernels, but we actually kind of like breaking them off by hand haha. And we’re currently living in a barn that we turned into a little cabin, but we’ll definitely show more once we start building our house later this year
I am truly so excited for the growing season to start, so I can plant my own little container garden, but also see what you guys do with your friends and your land! You guys are so inspiring and brighten up my day + make me feel at home :) Thanks for sharing, as always

I love the idea of nacho sauna! I mean, the traditional Finnish sauna layout does include a second stove, which has a large iron cauldron inside the stove for heating up water. It has been traditionally used for washing up clothes and making beer, but why not making hominy.
As someone who has a 4 year landrace of corn going in central Kentucky, may I "steal" your grainbow word? It is amazing!

My two cents: I don't put meat in my beans, but I reserve the lard from when I make carnitas (which absorbs a bunch of flavor from the oregano and cumin I use), and I use that. I've done it both with the lard and with just spices and no fat, and there's a big difference. I think the key to a good pot of dry beans is adding a big dollop of saturated fat. Whether that renders out of some meat or comes from a jar of coconut oil - I'm not sure if that matters so much.

We grew corn the past two years specifically to nixtamalize and make tortillas, but haven't done it yet! This makes me want to get on it already :)
You should do it! It can seem a little intimidating at first, but it’s really pretty simple and the result is worth it

If you ever want to learn how to make cheese from scratch, i would recommend " the art of natural cheese making" the book teaches how to make cheese from raw milk starting with the most basic cheese all the way to Cheddar

Yea I think it should just really quiet background noise. Makes for a more comforting feel IMO
Did you guys do water tests? The area we bought our property has high pfas contamination so any water not from an artesian well needs to be filtered
Yea the water’s very clean up here in the mountains. Most of our water comes from a public spring house down the road and we have a filter, but when we’re boiling it we just use the creek water. It’s a source stream coming right off the mountain.

It’s a construction site so there’s a lot of potentially alarming-looking stuff haha. Funny enough, we actually finished that wall today and the wire you’re seeing is no longer visible

So are you guys going to develop your own strain of landrace Corn for the Farm? By letting these variaties freely cross pollinate over the coming season?
Yup, that's the plan! We'll still grow our other varieties and maintain them in other plots on the land, but the landrace variety will be in a little isolated patch on it's own
@@HomegrownHandgathered if you need or want some more genetic diversity i have a landrace that i have been developing for the last 12 years, it highly diverse and it has been bred to thrive in the Netherland.

What did you add in the beginning when first boiling the corn?
Pickling lime aka cal
I think it’s pickling lime. It makes the water alkaline, which is required for nixtamalizing corn. It changes the flavor/texture but it also makes more B vitamins bio available, which is important if corn is your major source of those.

Love the content, But the piano music is ofen too loud. It can be difficult to hear what you say because it’s repetitive and drowns you out a lot. Sometimes you turn it down when you speak which is helpful. Could be just on my end but it happens in most videos. I just wanna hear you 🙃
Well we turn it down for the voiceover part because we’re usually not saying anything that interesting in the b-roll background. Those are just random convos we’re having while we do stuff
