Its coming along lovely! Filming can certainly make bagging up 4 tonnes of rubble look quick and easy, but lots of work there! Love your raised bed around the tree, should look fabulous in the spring :)
The mortar you are using for the stone walls looks good. If I understand it, the product comes pre-mixed with sand, just add water. I think you said it's more expensive but saves a lot of time. Based on results, it appears worth it, though it's your decision. Keep up the mortaring sections and any year now you will be done 🙂. Good luck.

Check with a local arborist. Adding soil around a tree will slowly kill it as it changes the ability of the tree to breathe. Trees can handle at most an inch per year. Those trees might be different.
