Cinnamon Apple Syrup from Apple Peels and Cores

  • Don't throw away those peels and cores! Here's an easy way to put them to good use. Your pancakes will thank you :-).
    Cinnamon Apple Scrap Syrup
    2 Gallon Bags worth of apple peels and (seeded) cores
    6 cups of sugar for every gallon of juice made
    4 Cinnamon Sticks
    Place peels and cores in a BIG stock pot (I use my water bath canner). Cover with water. Bring to a boil and then simmer for 20-30 minutes. Strain. Add 6 cups of sugar for every gallon of juice you have. Bring to a rolling boil stirring constantly. Reduce heat and simmer uncovered until desired consistency is reached (you will evaporate a lot of liquid!). Water bath canner 10 minutes for pints or half pints.
    Apple Syrup BBQ Pork Ribs
    One rack of pork ribs (3 lbs ish)
    Salt and Pepper
    1 cup Cinnamon Apple Scrap Syrup
    1/4 cup steak sauce OR soy sauce
    1/4 cup apple cider vinegar
    1 tsp cumin
    1/2 tsp garlic powder
    Juice from one orange
    Rub ribs liberally with salt and pepper. Don't be stingy! Place in crock pot. MIx the rest of the ingredients together and pour over ribs. Cook on low for 6 hours, basting the ribs with the sauce 2 or 3 times during the cooking process.
    To make a dipping sauce from the rest of the liquid, remove ribs from crock pot. Mix 1 Tablespoon cornstarch in 1/4 cup water. Mix into the liquid in the hot crock pot to thicken. Enjoy!!

    This was so wonderful, I added a touch of mine to my 3rd batch. I LOVE cranberries in apple pie...SO...I threw a handful of cranberries in today's batch. OH MY GOODNESS!! It is wonderful!! Left them whole and slightly smashed toward the end. I am so glad I found your site!!

    I made this today since my husband has an apple peeler, slicer, corer and made lots of dehydrated apple chips. I told him not to throw away the scraps, and today made syrup to sweeten my coffee. It's yum! It did boil over a little bit, but that was my fault as I was trying to learn some new songs for church while it boiled and would check on it each time the timer went off. Side note: I put the cinnamon sticks in the strained liquid with the sugar and did not realize it would create some tiny floaters. Not many, but next time I will do it your way. I found this video after the fact.

    Somehow the channels switched and my comment got posted on someone else's site so I am posting it again here. This is JUST what I was looking for. Wish I had found it BEFORE I threw away the peels and cores. Just canned my first apple and when they started processing I wondered what could be done with the peels. I checked youtube And HERE it is!!! AND from Teal House Farm! I will definitely do this from now on. Question: to can the apple slices I made a syrup of 1 gal. water/2 cups sugar/1T cinnamon. I didn't have that many apples to can so I had a lot of syrup left and it has all gone down the drain. Was there something else I could have done with it???

      The syrup is just sugar water…depending on how heavy a syrup you made you probably could’ve boiled some tea bags and made it into some sweet tea!

      Probably would not have a strong enough taste compared to cider make from crushing apples. We tried to make juice form the peels but the kids felt it wasn’t “apple” enough

      You sure can! If in the fridge I’d recommend using it up within a month
