What’s the process of precooking/boiling? And how long does it take to airdry or refrigerate?
Was the oven set on high heat when he roasted the pork after leaving it overnight?
It’s an Apollo cooker turned on high heat for about 45 minutes….depending on the size of the meat.

Salt - 10g
Sugar - 5g
5 Spice Powder - 2.5g
White Pepper - 2.5g
Mix all those ingredients and use 2% of that mixture for every kg of meat. So for 1kg pork belly, use 20g of that mixture, that equates to 1% salt (10g) of the total meat weight. Over 1% of salt of the total meat weight and it will get salty real quick. Cant go crazy with the 5 Spice Powder either as it will overpower the whole recipe.

Did he need to close the lid of the oven while roasting? What temperature in celcius?
Yes the lid is closed. Also, there is no thermostat function on the traditional Apollo ovens. The roasting itself relies on the experience and the skill of the chef. Ole skool style.

I'm afraid this one is cooked with a manual oven without a thermostat. The chef cooks and estimates the temperature based on his experience.
