It is a buttercream that is much less sweet than an American Buttercream which is basically Icing/Confectioners Sugar, Butter and milk whipped together.
I find American Buttercream way too sweet so I was excited when I found this recipe. It was used a lot for Red Velvet cakes before Cream Cheese Frosting became the craze. It has a great consistency for piping or icing cakes but is of course loaded with butter which gives it it's light and fluffy consistency!

INGREDIENTS FOR ERMINE FROSTING:
30g (¼ cup) All Purpose Flour
150g (3/4 cup) White Sugar
250g (1 cup) Milk
¼ teaspoon Salt
225g (1 cup) unsalted, softened Butter
1½ teaspoons Vanilla Extract

I love this frosting, but that big glob of roux on the side of the bowl really bugged me :)

Hello, this recipe will make enough for 12 cupcakes, but it really depends on how much you use on each cupcake.
You could definitely stretch it if you don't use a ton on each one. Enjoy!
Can i change the unsalted butter with shortening ?
Hi, I would advise only changing out half of the butter for shortening. You don’t want to change/lose the flavor too much. I also always say try it and see how it comes out. I never use shortening so I don’t know what the flavor or texture will be like.

Hi. I really want to try this frosting. However I'm wondering if I can replace half of the butter with shortening. Because I leave in a humid county and I'm worried that it might melt. Thanks.
HI Kay Ann, I haven't tried replacing the butter with shortening as it can change the taste, so my advice would be to replace 30% of the butter with shortening so that you do not lose the taste too much. If you find that it still tastes good, then try 50/50 next time and compare the taste. Thanks for your question. Let me know how it goes.
