Today i am sharing with you all a very special recipe which is Butterscotch Pastry. This is a butterscotch flavour sponge cake with butterscotch whipped cream frosting. This pastry comes out very soft and moist. The silky butterscotch frosting enhances the taste of pastry. It looks so beautiful. You can make this cake for New Year Or any other occasion. This cake is very easy to make with very common ingredients. So do try this cake and share your valuable comments with me.

~Ingredients for Eggless Butterscotch Pastry~
Measuring cup used- 240ml, 120ml, 60ml
Cake tin used- 7"× 3"× 3.5"
For Butterscotch Sponge
Maida or Refined flour- 1 cup or-150 g approx
Refined oil- 1/4 cup or 50 ml
Sugar- 1/2 cup or 100g
Milk- 1/2 cup + 3 tbsp or 150 ml
Butterscotch essence- 1/2 tsp
Vinegar- 1 tsp
Milk powder- 1/4 cup
Baking powder- 1 tsp
Baking Soda- 1/4 tsp
Yellow gel food colour- 2 drops
For Butterscotch Whipped Cream
Chilled whipping cream(sweetened)- 1 cup
Butterscotch essence- 5-6 drops
Yellow gel food colour- 2 drops
For Sugar Syrup
Sugar- 2 tbsp
Water- 1/4 cup
Butterscotch Chips and Cherries for decoration

Madhavi Ji, I followed each and every step , baked on convection for 28 mins as it was done but cake did not rise like yours and two layers were only cut also cake was very crusty, not soft so cutting was difficult

Maybe it should have been baked for little more. Preheat oven for 5-10 minutes on 180°c then bake the cake. Do not preheat for long time because if oven is very hot, the cake will rise suddenly and then sink. Do check the baking powder and baking soda if the cake is not rising.
