Hardly any thing that says keto in the super market is keto! It’s loaded with starchy sugars! I use 8 oz. heavy whipping cream, 3 tbsp. chia seeds (fiber), Hersheys zero sugar with stevia chocolate syrup, shake and refrigerate. I like pudding, pie, cake, etc. Thanks Steve & Courtney
I like pudding. I make the hard boiled egg recipe and use black cocoa. It gives me that Oreo flavor. I will sometimes make it into pudding pops in the freezer.

I have to agree 100% with you. On what it takes to get keto certified. I have much respect for the organizations. Originators but so many things I thought were nowhere near keto have had their approval.
I think a lot of people (like me) buy the Simply Delish pudding to use in recipes like Ninja Creami ice cream. I would never eat it straight. Actually the starch has been a little off-putting to me, and I've minimized my use of it because of that. Interesting that your blood glucose response was so stable; I'd guess the whipping cream helped a lot.
That’s why I’ve been curious about this brand of pudding. I am currently using the very, very dirty Choc Zero hot cocoa mix that I didn’t like as a beverage (too cloying). It only takes a tablespoon for 48 ounces of base, for which I use Maria Emmerich’s egg pudding slightly modified. For my vanilla and strawberry flavored ice cream I use collagen peptides instead of pudding mix. I can’t recall where I got the idea, but it works great! When the Choc Zero is gone I will use the collagen for the chocolate too.
I do like pudding generally. I make the avocado based one when a craving hits me. I would really like a butterscotch one, that is a comfort food from my childhood. Not this product sadly. Always nice to have Courtney as part of the review!
I like pudding. I would eat it weekly if I could find one that was acceptable. Having said that, the stove top pudding is much better than the instant and would prefer it. It's a bit pricey too. I have made this before but I don't remember having issues with lumps. I was seriously disappointed in the strawberry and butterscotch flavors.
I use the Simply Delish products and I typically use them with heavy cream and some coconut milk. It works great and is super creamy. I will often use it as a base for ice cream and custards.
I don’t use pudding mixes for pudding so much as I use it as an ingredient. Like cheesecake pudding mix blended with half & half or heavy cream, and cream cheese as a no bake cheesecake dessert. Or added to ninja creami ice creams as a flavoring & stabilizer.
Years ago, when I first started with alternative milks Simply Delish was not very available so I played with the instant/cold application modified starches (not the ones that need to be cooked) to further thicken Royal and Jello brands and there is not the same proteins to bind with. Also to make moderately low carb mock pies to get a clearer gel (Ultra Gel), it is also the type they use to make standard instant puddings. Simply Delish uses dextrin and potato starch as thickeners and some type of vegan emulsifier. Now I add a little guar gum or xanthum gum so I can use 2 cups of alternative milk with Simply Delish and/or make it with heavy whipping cream. Using only 1 1/4 cup of alt. milk will have a too strong flavor and sweetness (and associated cooling effect). The chocolate has the worst texture since cocoa powder does not incorporate easily. It is definitely cleaner to make a homemade cooked pudding with eggs but one slip and you have dessert flavored scrambled eggs!
To make it smoother run the mix thru a fine mesh strainer before you mix it together. I always add espresso powder dissolved in a half tablespoon of warm water to sf chocolate pudding bc it enhances chocolate taste. I make Jello sf chocolate pudding pie for family. Replacing some milk with heavy cream makes it more mousse like but doesn't sound like you'll make it again. Thanks for the taste testing videos!
Simply Delish also makes Jello. Black Cherry is our family's favourite! It also makes a great parfait layer... see my previous comment under this video for more parfait ideas using this pudding (but note that chocolate is their weakest flavour and all other flavours better than that! Banana is my fav!)

I like their pudding, though I find that I have to add cocoa powder to the Chocolate, it's a bit bland on that front. I use Fairlife whole milk. I haven't tried Butterscotch yet, and am hoping to see a Pistachio. The Jello brand has that wonderful 1st two ingredients as you mentioned.
I was glad to see you do a video on this particular item. I have looked at several times, I have almost ordered it. I am a type two diabetic, however, it is controlled with my keto lifestyle, so I think that there’s a possibility that it would spike my blood sugar.but I would like to find a recipe, that’s easy where I could make a chocolate, or vanilla pudding.
I bought a box of the strawberry pudding because it was in the reduced bin but haven't made it. I was trying to come up with a way to stretch it to cut the carbs more and you might have solved that problem with blending it with whipped cream or whipped coconut cream. With the problem Courtney had making it smooth I'll mix mine up in the blender instead. Using a high protein non-dairy milk should allow you to mix it with 2 cups of milk. I don't like the ingredients of unsweetened Ripple brand but it is a high protein product in addition to soy milk. I don't use them but Jell-O used to say on their packages to reduce the amount of milk if using non-dairy milk too. I really like the gelatin/ "Jell-O" versions but not prepared as directed. I use the powder to add color and flavor to other things or to make the "salad" my mom made with cottage cheese, whipped cream and dry gelatin. She used canned pineapple but I use fresh berries to keep it Keto.
2 recipes we use simply delightful for: party parfait buffets! people create their custom parfaits in wine glasses with options like multiple flavours of pudding, keto-meringue-fluff, berries, nuts, SF chocolate chips, coconut flakes, etc. Fun activity and non-keto people love it! next, I make a high protein pudding mixing hard boiled eggs + coconut cream + pudding powder in a food processor. I have not tested this with non-keto people... there's never any leftover! haha!
I almost forgot! Another great parfait layer is the simply delish jello made in silicone mini ice cube trays! once set, push the jello mini-cubes into a bowl to be spooned into a parfait layer! it is pretty AND adds great flavour and a new texture within the other layers!

I plan to buy some, not to eat as pudding, but to use in various recipes I've seen with Jello SF pudding, which I won't use because of the maltodextrin. Since it didn't spike your blood sugar I'll assume it is ok for me to use. I'm not diabetic and don't know if I have any other insulin issues. Did you eat the entire bowl of pudding?
Given the reasonable glucose response, I'd say this product would be okay as a periodic low carb dessert - IF it tasted better and had a better texture. The texture really reminded me of when you accidentally put to much xanthan gum into a sauce. That starch as a first ingredient, though, really makes me wonder how low the standards are to get a product "Keto Certified".
I used half of this package with 8 oz cream cheese, a can of nestle crema table cream, 1/2 cup powered sukrin, and 1 tsp vanilla, then combined it with already whipped heavy cream. Refrigerate. Eat. It was not too bad, but the stevia was dominant.
I used to get their banana flavor pudding mix years ago, I don't remember it having that strong erythritol taste. Maybe the chocolate one is stronger or something
Chipmonk baking uses a 9 to 1 ratio of allulose to monk fruit and that seems to work well. I think most companies stick with erythritol because it’s cheaper and less worry about supply issues.
At least for sugar free Jell-O brand, the first two ingredients are corn starch and maltodextrin. So many people, unfortunately, see the words "sugar free" and think that means "good for keto".
So I like the different kinds of “pudding” they sell but I make it differently, first I use heavy whipping cream and three cups per box then I add stuff like strawberry flavor I put half a cup of mixed berries in a ninja creami container and make ice cream YUM or vanilla I add some natural peanut butter and really whip it to almost a “cool whip” consistency or freeze it again in a creami container. There are many possibilities with this stuff maybe try some ice cream idea for yourself I bet someone with your creative mind can come up with something! Also with the ingredients spread out over three cups and the added fat my numbers only rise 10-15 points throughout. Enjoy Bob
Never was a big fan of pudding as a kid and that probably stems from the way my mother would make it lol. I was raised in the 60s and pudding was made by cooking it on the stove top and I’m not sure when my mother started using the instant version. After cooking it, she would pour it into the individual bowls and let it cool on the counter and it would form a rubber like skin on the surface. I know some people love the pudding skin, but I absolutely hated it. I was raised in a household that you never threw food away, and I was forced to incorporate the skin into my pudding making it a chunky mess. This day I am not a fan of pudding
Thank you for this Simply Delish pudding review. Fwiw, I've seen "corn" starch specified on their ingredient labeling on Amazon. I also ate a lot of pudding as a kid. I still crave chocolate, butterscotch and pistachio puddings. However, over the past several years, the closest I've come to eating pudding is a chocolate mouse a family member has occasionally made for holidays. On another occasion, a friend once brought a chia seed pudding to a pot luck. I thought it was okay, but I haven't made any myself since then. A chocolate or vanilla pudding is easy enough. There are many keto recipes available to choose from for that. However, I don't know how to make butterscotch or pistachio flavors. I've looked into flavoring extracts but couldn't find a pistachio flavor with great reviews. I've wondered how Keto Chow might work for puddings, but haven't experimented with that. I'd look forward to any pudding recipe videos you might create that went beyond chocolate or vanilla flavors. Especially a pistachio flavored one. ;-) Thanks again
Simply Delish Banana Yogurt Pudding w/ Highkey Vanilla Wafers recipe: Put all the ingredients in a mixing bowl and blend with a hand mixer or whisk thoroughly with a spoon: 2 Tsp dry Simply Delish Vanilla Keto Instant Pudding mix powder (aprox 1/8 of the package), 1/2 Cup Ratio Vanilla Yogurt, 2 Tablespoons (or 1/8 Cup) Premier Vanilla High Protein Shake, 1/2 Tsp of Molina Mexican Vanilla Blend, 1/2 Tsp of McCormick Banana Extract. . Spoon into a serving dish, insert 6 Highkey Vanilla Wafers between the mixture and the sides of the dish. Chill for 5 minutes in the freezer or refrigerator. Top with Sugar Free whipped cream if desired. Enjoy!
We bought some of these to try back in May of 2023. These things are absolutely AWFUL. To call this pudding is a long stretch of the imagination. I don't know why I haven't thrown them all away yet, but since I still had them I was able to confirm that what I have is the same as what you tested. I've tried every type of milk I can think of, all the same result. Heavy cream, coconut milk, almond milk, hemp milk, etc. Nothing works, it's just so bad. Steve you were really nice your review, I'd have slammed this stuff if I made videos. And to answer your question, I loved instant pudding, of course I don't eat it anymore.
Yes I also bought the banana and vanilla the Jello is very good too I think I had 4or5 different kinds from . I never cared too much for pudding when I was younger but the Jello I liked a lot so happy to find a substitute 🤗
I also looked at the ingredients and decided against it. I do use their jelly packets as the base to make keto gummies and they're great. I much prefer them over using an electrolyte drink like BAI, or even the tea-based ones. Texture is also very good, and letting them dry standing up in the refrigerator for a week makes them a dead-ringer for regular gummies.
@@SeriousKeto Like Jello, they call them "Plant-Based Jel". Some stores carry them in the pudding/Jello section, but usually only a few flavors (strawberry/orange/raspberry). They have more that you can order on their site and bundle them for a better price. I prefer the peach, lime, and black cherry. They also have an unflavored one if you wanted to add your own flavoring.
I use to love Chocolate pudding in my 30s and 40s. I used Real Whip Whipping Cream. I am okay now in not craving it but I would like to try this one. I am wondering if since as a Kid You ate Jello brand and Snack Pack Puddings if You did not know that “Homemade from scratch Pudding that are Chocolate sometimes look or have a little powdery feel in the mouth. I think this sounds as it should as compared to homemade pudding. I may be wrong but that was my experience when I first ate a from scratch pudding.
I used to eat pudding all the time. Now, not so much. It's so super easy to make a chocolate mouse with heavy whipping cream and cocoa, and it tastes so much better than instant pudding! Though to be honest, my go-to snack for when I want something like this is cheesecake/mouse. Easy to make and cleaner, simple ingredients. According to the Simply Delish website, the starch they use for their pudding is corn starch. Though when I looked it up on a store website (Walmart), they have Simply Delish keto pudding for sale online with potato starch listed as the ingredient. It's confusing. Maybe they are selling older stock? I suppose it's possible Simply Delish changed their recipe, but who knows which one is correct. I think I'll stay away from it. The way it didn't all mix up when being whisked was a big turn off for me anyway.
If I was shopping for myself, and I saw starch as the first ingredient, then I would pass. I’m T2 diabetic. I would probably make a chia pudding and add chocolate protein powder and mint flavoring. I have some chocolate protein powder that I’m going to be testing. I don’t normally eat chocolate because I’m concerned that it might be a trigger for me to overeat.
Yeah I have to tell my wife to not buy “keto” products. Except Quest occasionally - expensive but no soybean oil. Hard to find anything without soybean oil.
The inclusion of soybean oil in a “keto” branded product is a giveaway that the company doesn’t really care and is just trying to exploit the keto market.
Don’t use the coconut milk. I use it with protein shakes. Just 2 tablespoons and it’s a lot cleaner than Jello pudding so it works for me. If I made it alone I would use half unsweetened milk of choice and half heavy whip.

I mentioned it yesterday in your podcast comment section about Vinnie Tortrich's new documentary "Dirty Keto". Well last night, I paid Amazon Prime the rental fee to watch it and the entire 60min it was about products like this one and how it warps people's perception about this lifestyle. He even had about a 10min part in there about this so called "Keto Certified" stamp.😂 As for this product, yeah, I wouldn't have purchased it either.
I feel I'm more pragmatic about keto than Vinnie T. Just as big food harms keto by creating products that are not going to help anyone toward their ketogenic goals and lifestyle, I feel that dogmatic people like Vinnie T portray keto as something so restrictive (and in his opinion, necessarily so), that it turns people away.

He is an OG in the keto/lowcarb community and he is very communicative on the X platform and Instagram and I've never gotten that impression you have of him. If I may suggest for pudding: 1 1/2 cups cottage cheese with your favorite (1 serving) Keto Chow flavor like Pecan Sticky Bun, plus 1/3 cup of milk or water. Blend it well in your blender until smooth and refrigerate for a while, the longer the better. Then enjoy! The Simply Delish did not look appealing and yes you could see the grittiness. @@SeriousKeto As far as I know, I came up with it but that doesn't mean someone else hasn't done it. I started by wanting to freeze it into portions and top with some unsweetened Lily's chocolate chips (looking for healthy protein packed sweet treat) and that works and is a nice frozen treat but about the 2nd or third time I did it, I thought this makes a good pudding also (before freezing of course). As far as I am concerned, it is yours to do with as you see fit.
Many powders have a hard time mixing in HWC because of the fat content, in my experience. Plus, the amount of whipping would probably turn it into a chocolate whipped cream (likely with little chunks in it).

Milk has proteins that react to the thickeners. Soy milk (yuck) is the closest in protein but for me would have to be the last thing available before I would eat it.

Gosh. I liked it. I mixed it with my homemade kefir. It was really good. I didn't think about that first ingredient. But, I like it.

I bought a box of the strawberry pudding because it was in the reduced bin but haven't made it. I was trying to come up with a way to stretch it to cut the carbs more and you might have solved that problem with blending it with whipped cream or whipped coconut cream.
With the problem Courtney had making it smooth I'll mix mine up in the blender instead. Using a high protein non-dairy milk should allow you to mix it with 2 cups of milk. I don't like the ingredients of unsweetened Ripple brand but it is a high protein product in addition to soy milk. I don't use them but Jell-O used to say on their packages to reduce the amount of milk if using non-dairy milk too.
I really like the gelatin/ "Jell-O" versions but not prepared as directed. I use the powder to add color and flavor to other things or to make the "salad" my mom made with cottage cheese, whipped cream and dry gelatin. She used canned pineapple but I use fresh berries to keep it Keto.
I suspect I won't be making it again, but thanks for the tips if I do.

2 recipes we use simply delightful for: party parfait buffets! people create their custom parfaits in wine glasses with options like multiple flavours of pudding, keto-meringue-fluff, berries, nuts, SF chocolate chips, coconut flakes, etc. Fun activity and non-keto people love it! next, I make a high protein pudding mixing hard boiled eggs + coconut cream + pudding powder in a food processor. I have not tested this with non-keto people... there's never any leftover! haha!

I almost forgot! Another great parfait layer is the simply delish jello made in silicone mini ice cube trays! once set, push the jello mini-cubes into a bowl to be spooned into a parfait layer! it is pretty AND adds great flavour and a new texture within the other layers!

So glad you and Courtney reviewed this pudding mix. I plan to buy some, not to eat as pudding, but to use in various recipes I've seen with Jello SF pudding, which I won't use because of the maltodextrin. Since it didn't spike your blood sugar I'll assume it is ok for me to use. I'm not diabetic and don't know if I have any other insulin issues. Did you eat the entire bowl of pudding?

Given the reasonable glucose response, I'd say this product would be okay as a periodic low carb dessert - IF it tasted better and had a better texture. The texture really reminded me of when you accidentally put to much xanthan gum into a sauce.
That starch as a first ingredient, though, really makes me wonder how low the standards are to get a product "Keto Certified".
I used half of this package with 8 oz cream cheese, a can of nestle crema table cream, 1/2 cup powered sukrin, and 1 tsp vanilla, then combined it with already whipped heavy cream. Refrigerate. Eat. It was not too bad, but the stevia was dominant.

I always loved pudding, but find making a mousse with heavy cream and some kind of flavoring or cocoa powder is good.
I used to get their banana flavor pudding mix years ago, I don't remember it having that strong erythritol taste. Maybe the chocolate one is stronger or something

Chipmonk baking uses a 9 to 1 ratio of allulose to monk fruit and that seems to work well. I think most companies stick with erythritol because it’s cheaper and less worry about supply issues.

I love pudding and used to eat a ton of packaged sugar free but now I make Maria Emmerich's egg white pudding.
At least for sugar free Jell-O brand, the first two ingredients are corn starch and maltodextrin. So many people, unfortunately, see the words "sugar free" and think that means "good for keto".
So I like the different kinds of “pudding” they sell but I make it differently, first I use heavy whipping cream and three cups per box then I add stuff like strawberry flavor I put half a cup of mixed berries in a ninja creami container and make ice cream YUM or vanilla I add some natural peanut butter and really whip it to almost a “cool whip” consistency or freeze it again in a creami container. There are many possibilities with this stuff maybe try some ice cream idea for yourself I bet someone with your creative mind can come up with something! Also with the ingredients spread out over three cups and the added fat my numbers only rise 10-15 points throughout. Enjoy Bob

Never was a big fan of pudding as a kid and that probably stems from the way my mother would make it lol. I was raised in the 60s and pudding was made by cooking it on the stove top and I’m not sure when my mother started using the instant version. After cooking it, she would pour it into the individual bowls and let it cool on the counter and it would form a rubber like skin on the surface. I know some people love the pudding skin, but I absolutely hated it. I was raised in a household that you never threw food away, and I was forced to incorporate the skin into my pudding making it a chunky mess. This day I am not a fan of pudding

I also ate a lot of pudding as a kid. I still crave chocolate, butterscotch and pistachio puddings. However, over the past several years, the closest I've come to eating pudding is a chocolate mouse a family member has occasionally made for holidays. On another occasion, a friend once brought a chia seed pudding to a pot luck. I thought it was okay, but I haven't made any myself since then.
A chocolate or vanilla pudding is easy enough. There are many keto recipes available to choose from for that. However, I don't know how to make butterscotch or pistachio flavors. I've looked into flavoring extracts but couldn't find a pistachio flavor with great reviews. I've wondered how Keto Chow might work for puddings, but haven't experimented with that. I'd look forward to any pudding recipe videos you might create that went beyond chocolate or vanilla flavors. Especially a pistachio flavored one. ;-)

A parfait with layers of pistachio and chocolate rocked.
Simply Delish Banana Yogurt Pudding w/ Highkey Vanilla Wafers recipe: Put all the ingredients in a mixing bowl and blend with a hand mixer or whisk thoroughly with a spoon: 2 Tsp dry Simply Delish Vanilla Keto Instant Pudding mix powder (aprox 1/8 of the package), 1/2 Cup Ratio Vanilla Yogurt, 2 Tablespoons (or 1/8 Cup) Premier Vanilla High Protein Shake, 1/2 Tsp of Molina Mexican Vanilla Blend, 1/2 Tsp of McCormick Banana Extract. .
Spoon into a serving dish, insert 6 Highkey Vanilla Wafers between the mixture and the sides of the dish. Chill for 5 minutes in the freezer or refrigerator. Top with Sugar Free whipped cream if desired. Enjoy!

I use tara gum to turn my Keto Chow into pudding. Same principle though, and so much variety.

We bought some of these to try back in May of 2023. These things are absolutely AWFUL. To call this pudding is a long stretch of the imagination. I don't know why I haven't thrown them all away yet, but since I still had them I was able to confirm that what I have is the same as what you tested. I've tried every type of milk I can think of, all the same result. Heavy cream, coconut milk, almond milk, hemp milk, etc. Nothing works, it's just so bad. Steve you were really nice your review, I'd have slammed this stuff if I made videos. And to answer your question, I loved instant pudding, of course I don't eat it anymore.
It sounds like you've had a much worse experience with this pudding than I did.
Liked this pudding I would use half and half milk mixed with same amount of water making 4 carbs for cup of milk

Yes I also bought the banana and vanilla the Jello is very good too I think I had 4or5 different kinds from . I never cared too much for pudding when I was younger but the Jello I liked a lot so happy to find a substitute 🤗
I also looked at the ingredients and decided against it. I do use their jelly packets as the base to make keto gummies and they're great. I much prefer them over using an electrolyte drink like BAI, or even the tea-based ones. Texture is also very good, and letting them dry standing up in the refrigerator for a week makes them a dead-ringer for regular gummies.

@@SeriousKeto Like Jello, they call them "Plant-Based Jel". Some stores carry them in the pudding/Jello section, but usually only a few flavors (strawberry/orange/raspberry). They have more that you can order on their site and bundle them for a better price. I prefer the peach, lime, and black cherry. They also have an unflavored one if you wanted to add your own flavoring.
Also, I just use them as a base, so I add gelatin, allulose, citric acid, vitamin c, mct oil, and a little lemon or lime juice.
Im surprised they didnt say warm milk
We made it just the say the box instructed. I think warm milk (or milk substitute) might have caused the powder to dissolve better.

I use to love Chocolate pudding in my 30s and 40s. I used Real Whip Whipping Cream. I am okay now in not craving it but I would like to try this one. I am wondering if since as a Kid You ate Jello brand and Snack Pack Puddings if You did not know that “Homemade from scratch Pudding that are Chocolate sometimes look or have a little powdery feel in the mouth. I think this sounds as it should as compared to homemade pudding. I may be wrong but that was my experience when I first ate a from scratch pudding.
I used to eat pudding all the time. Now, not so much. It's so super easy to make a chocolate mouse with heavy whipping cream and cocoa, and it tastes so much better than instant pudding! Though to be honest, my go-to snack for when I want something like this is cheesecake/mouse. Easy to make and cleaner, simple ingredients.
According to the Simply Delish website, the starch they use for their pudding is corn starch. Though when I looked it up on a store website (Walmart), they have Simply Delish keto pudding for sale online with potato starch listed as the ingredient. It's confusing. Maybe they are selling older stock? I suppose it's possible Simply Delish changed their recipe, but who knows which one is correct. I think I'll stay away from it. The way it didn't all mix up when being whisked was a big turn off for me anyway.
I love pudding! Butterscotch is my fave. I think this product would be a trigger so I wouldn't buy it. I would probably eat the whole thing at once.

I find that boxed coconut milk is pretty bland. Canned coconut milk tends to have a stronger coconut flavor.

I’m T2 diabetic. I would probably make a chia pudding and add chocolate protein powder and mint flavoring. I have some chocolate protein powder that I’m going to be testing. I don’t normally eat chocolate because I’m concerned that it might be a trigger for me to overeat.

Yeah I have to tell my wife to not buy “keto” products. Except Quest occasionally - expensive but no soybean oil. Hard to find anything without soybean oil.
The inclusion of soybean oil in a “keto” branded product is a giveaway that the company doesn’t really care and is just trying to exploit the keto market.

Not so much ironic, as irony is usually an unintentional result that is the opposite of what was intended, and more just deceptive.
Don’t use the coconut milk. I use it with protein shakes. Just 2 tablespoons and it’s a lot cleaner than Jello pudding so it works for me. If I made it alone I would use half unsweetened milk of choice and half heavy whip.

Well last night, I paid Amazon Prime the rental fee to watch it and the entire 60min it was about products like this one and how it warps people's perception about this lifestyle. He even had about a 10min part in there about this so called "Keto Certified" stamp.😂
As for this product, yeah, I wouldn't have purchased it either.
I feel I'm more pragmatic about keto than Vinnie T. Just as big food harms keto by creating products that are not going to help anyone toward their ketogenic goals and lifestyle, I feel that dogmatic people like Vinnie T portray keto as something so restrictive (and in his opinion, necessarily so), that it turns people away.
@SeriousKeto see and I think this is a fascinating discussion. I think you would be surprised to find Vinnie isn't as dogmatic as you think. He is an OG in the keto/lowcarb community and he is very communicative on the X platform and Instagram and I've never gotten that impression you have of him.

If I may suggest for pudding: 1 1/2 cups cottage cheese with your favorite (1 serving) Keto Chow flavor like Pecan Sticky Bun, plus 1/3 cup of milk or water. Blend it well in your blender until smooth and refrigerate for a while, the longer the better. Then enjoy! The Simply Delish did not look appealing and yes you could see the grittiness. @@SeriousKeto As far as I know, I came up with it but that doesn't mean someone else hasn't done it. I started by wanting to freeze it into portions and top with some unsweetened Lily's chocolate chips (looking for healthy protein packed sweet treat) and that works and is a nice frozen treat but about the 2nd or third time I did it, I thought this makes a good pudding also (before freezing of course). As far as I am concerned, it is yours to do with as you see fit.

Possibly. I think I'd use a combination of heavy whipping cream and cream cheese.
What if you used heavy whipping cream which thickens as you mix it?
Many powders have a hard time mixing in HWC because of the fat content, in my experience. Plus, the amount of whipping would probably turn it into a chocolate whipped cream (likely with little chunks in it).
I made this with almond milk and it never really thickened to "pudding" consistency.

Milk has proteins that react to the thickeners. Soy milk (yuck) is the closest in protein but for me would have to be the last thing available before I would eat it.
I don’t think I’ve ever had soy milk and I expect to continue that streak for the rest of my life. 😉
The brand of liquid stevia seems to matter to me. I use Pyure brand liquid stevia every day, and no after-taste to me.
I've been pretty happy with Sweet Leaf, but I'm sure everyone has their own preference.
Thanks for the video! If you put the mixing paddles in (whatever) before you turn the mixer on you get less mess! Ask me how I know?! LOL The home made Cool-Whip is an awesome idea! So 1/2 heavy whipping cream and a few drops of Stevia. What would be an ideal mixing time for this? I tried it and I couldn't get any stiff peaks.
