We had company this past week so I'm finally getting caught up! This ferment looks ridiculously tasty. I've gotta try this!! Oh, I fed my dad fermented pickles this week and he ate an entire jar in one sitting. I don't think his guts were quite ready for that. 😂
Haha! I’ve done that before and it’s not super pleasant but it’s a good way to get the nitro over pretty quick! I hope you do try it! It’s one of my favs for sure
Lol I drink maybe 1 cup of wine every other year ( if we can afford it) I definitely want to try fermenting blueberries now!!!! I can see a cheese and crackers spread with a blueberry and sprite drink or sparkling water. 😋 Yummy
If you’re going to have wine you may as well treat your gut at the same time!
@@FermentedHomestead lol right!!!
My brother dropped off a bunch of blueberries, and I knew just whose channel I wanted to consult. You never disappoint! Thanks!
I mixed up a 2% brine to pour over and make sure everything's submerged. Hopefully that didn't add too much extra salt, but at least I know I don't have any air touching the berries. I'll try to remember to update this comment to let you all know the results.
Have you ever tried raspberries? I was wondering if it was equally good
I will definitely try this one. You smiled so many times, and a little dance. I cut back on my fermented foods for awhile. I was working so much outside, that i was getting dehydrated. Did you notice that, with yourself, while doing all that work? Excellent recipe!!!
I sure did! I cut back also because I just didn’t have the time but now I have a whole lab going on haha. Lots of yummy ferment vids to come 💜
What do you use fermented blueberries for?
I used them as a syrup substitute
Great video! How many days total was the ferment? Was the 11 days at the previous tasting point?
Thank you! I’m not sure but off hand I’d say that was likely total
What if you crush them first?
It would ferment quicker because the bacteria would access the sugar quicker
good video ! we had a good laugh when an extra arm suddenly appeared in the video!
Haha it was pretty funny 😆
Mmmm blueberry wine sounds fantastic!❤🙏
Agreed!
Yummo! Sounds like it would be great on some good full fat cultured yogurt. Lots of belly happiness.😊
Noma guide to fermentation is Renee Redzepi. Sandor Katz wrote The Art of Feementation.
Hello from Croatia. Thank you for making this video. Please, tell me how long fermented blueberries can last in the fridge (not frozen, but just refrigerated)?
If the acidity is high enough it will technically last a very long time. However the high sugar content will cause it to continue fermentation to some degree even in the fridge so it will continue to slowly increase the sour flavor
Hoping to get some blueberries this season and try this! Great video Anna!
would have never thought to try this, great idea
I was surprised to tasty it is! 😁
I been trying to do it with my vacuum chamber it’s not easy I tell you that
I can’t imagine it would be! Try it in a jar, much easier 😊
Try doing a flash freeze with the blueberries. Lay the berries out on a baking sheet, kind of spread out. Stick in the freezer for a couple hours and then put in the vacuum bag with the salt and seal. This way you are not crushing the berries when sealing. When the berries thaw out, they will release their juice more.
I'm thinking in my homemade yogurt 😋
Have you fermented pineapple before? They have great acid and sweetness.
I haven’t but I’m starting it today! Did a Costco run yesterday and I’m all ready to go 💜
@@FermentedHomestead I can't wait to see that video!!!! I absolutely love pineapple
@@FermentedHomestead hey hun, how did the pineapple ferment go?
Question, if you use the blueberries in baked goods would they loose the benefits of the ferment?
I would say yes. Anything past 95- 105 will kill the live enzymes.
Some will be lost but some will remain. Bacteria breaks down the fiber to some extent so they will still be easier to digest and it also feeds on sugars so it will have less carbs. There are other benefits I came across years ago but I can’t find the source again, if I find it I’ll get that to you. Plus it has the flavor, my husband made blueberry pancakes with these and it was delicious and unique!
@@FermentedHomestead awesome to know thank you ❤️. I definitely would love to see an in depth video of the benefits of ferments. You alluded to some of the gut benefits and findings as well as other body health. The one that sticks with me is the gut feeling info you said a while back. Maybe providing the resources you used so that we can get them to learn from for ourselves as well? You truly opened my eyes on the nutrition of ferments.
Can you use blueberry juice to make a brine to pour over them instead of using just the salt?
The salt is needed for the ferment you hardly taste it after like a pickling
O yes please !
Don’t do metric measurements
I do 1 tablespoon per quart
