I’m in school for Wordpress I got certified for coding but wanted more and I started to see Wordpress going around as an alternative this helped out tremendously
Nice, I really enjoy mixing the two and customizing or editing through code (I got a few other tutorials showing that i.e. shortcodes). There's lots of ways to do it within WP. And clearly with the latest update (5.9) they are launching full-site editing so you can do more drag-and-drop style without touching the raw files. Best of luck and hope you're continuing to make progress with it!
It's really really important you understand that if you can find a way to do what you want without a plugin, the better your site can perform. I think too many WP beginners think to solve all their problems with plugins, but that leads to a lot of bloat in site load times.
Yup 100% agree. I'm lucky in that I learned HTML/CSS before WordPress so I always opt for customizing with code. Most people are the opposite and I get their viewpoint as a beginner. If you can get away with 2-3 plugins, that's best... 8-10 is max before you need to simplify.
I made an Elementor tutorial about 2 years ago but it was more focused on the pages, not posts. I'd think you can edit in a similar way with the blog but hard to say for sure!

I have an existing WP site, just wanted to add a blog to it
