    the wedges were made greatly awesome, only problem was with crispness.

    One of the best tips I ever discovered for making Fried Potatoes of any kind is cutting them into small enough sized chunks (rather than large sticks or wedges) so they can easily float upon the oil's surface while cooking. The great benefit of this being they won't stick on the bottom and burn or end up mangled. Nor will they need to be stirred at all during cooking.
    Cut the wedges as pictured above at least into halves or even thirds.
    McDonalds overcomes this ''size problem'' by cutting their Potato sticks ultra-thin which isn't easily accomplished at home without a mandoline slicer or similar food prep device. But this approach has a great disadvantage of the Potatoes breaking easily and appearing limp as they cool down.
    Use a slotted spoon to remove and drop Potatoes into a new brown paper bag to absorb any excess fat. "Ice cream" brown paper bags are most ideal for this purpose. Grab a handful of them next time you're at the supermarket. Sprinkle with your favorite dry seasoning and toss around a bit while potatoes are still inside bag before serving.
    Some really spectacular dry flavoring enhancements to coat with once finished include any of the following choices:
    Packet of Shake 'n Bake (BBQ glaze) along with a TBL of powdered Sugar
    Packet of Cheese powder (from Kraft Mac 'n Cheese)
    Packet of Hidden Valley Ranch (dressing mix or dip)
    Packet of Good Seasons (Zesty Italian or Garlic & Herb mix)
    Packet of Lipton Onion soup mix
    HerbOx sodium-free instant Chicken broth (powder)
    Old Bay seasoning (use sparingly, can be too overpowering)
    Accent (food enhancer, aka MSG)
    McDonalds uses an even mixture (1:1:1) of Popcorn Salt, MSG & Confectioners Sugar inside the large aluminum shakers you see them sprinkle.

    If you don't have non-starchy potatoes then you soak your potatoes in water for 10 minutes. Also obviously she doesn't understand that there are different herbs. It all depends on the flavor you want. If you have no idea what you're doing then just get Mrs. Dash garlic and herbs. It tastes great on potatoes

    good info on the starchy non starchy bit...but this can be easily made in an oven with very little oil (baking them and there is no need for refined flour)...a much healthier but equally tasty recipe

    I loved the vid. One way to make homestyle wedges is to use stachy potatoes and peel them, but I let them soak in drinking water overnight in the fridge with a pinch of salt,then when I'm ready to make them I dry them on a paper towel,before pan frying them (due to a small pan I fry them in small batches,it help to allow the heat to rebound faster,I follow the same method for round cut home fries) I like conola oil for the application.
    I sub scribed,keep posting vids and I'll keep watching

    great recipe!! i cook mine almost the same way for years.. the only difference is i dont freeze them, and i microwave the potato until they begin to get soft so they steam on the inside, making them more creamy in the middle, after they fry.. but i will try the freeze and see if it makes them crispier

      Cecilia Ranger for the small ones like she's using,id microwave them maybe less than 5 minutes, and i check them after a couple minutes, and keep checking, becaus they will continue to cook, after you take them off.. and if you cook them too long they will be way too soft and hard to cut.. maybe the firmness of a ripe avacado shoud be perfect for them to be creamy in the middle..good luck

    I make my wedges differently. I put some vegetable oil in a large bowl (1/4). I add a homemade spice mix. I make sure the oil and the spices are thoroughly mixed. I add the wedges in the bowl (2 or 3 potatoes). Then, I put the wedges in a cooking tray and pour the remaining oil and spice mix on it before cooking them in the oven.

    I learned as a child to never use the hot oil pan in the front, it's a matter of time till a very painful disaster to happen there.

    I wouldn't recommend freezing them. In the fridge for a few hours maybe or even cooled at room temperature. That said, this is a good recipe for home cooking

    It would be helpful to know which potatoes are non starchy. The grocery stores in my town don't like it when I take the potatoes out of the bag and start peeling the skin off with my fingers. I usually use Russet potatoes.

      Just buy normal potato and after cutting put into brine for at least 1 hr and wash it 2 times.

      You can season them completely to your liking, Method is still the same, just different flavors. And you can always try a different herb/seasoning combo to match what you're eating each time.

      you can use any potato, just let them sit in water after you cut them for 10-30 minutes, before frying.

    I've tasted this in one of the grand Hotels in Chandigarh where I stayed for some time, it was awesome. The recipe is easy but the worst part is buying the Ziplock bags :-P.

      Abhinav Tiwari use a hard poly bag instead and tie the mouth with some rubber band...you will get the exact result...enjoy....
