A lot of Filipinos like that version of the Macaroni salad. And the Champorado is well loved anywhere in the country. I had bowls of it yesterday. True enough, indigenous cuisine needs to be introduced in the culinary scene here. Great job to everyone involved in this episode. I so love this!
In the segment with champorado, Chuy should have stepped in before they started eating and said “This is how you eat this.” Especially for first-timers, you can’t just eat a whole tuyo like that. 😂😂 Dahan dahan lang..
56:42 the bagoong sisi, is fermented in a lot of salt. So we usually wash it a bit and drain it to reduce the saltiness. Then we put chopped, garlic, ginger, chillies and onion. Then add vinegar, calamansi and pepper. It's like an oyster kilawin or ceviche. But you can also eat it as is and just add vinegar and calamansi just like a condiment. When I saw them pouring it directly into the rice, I said "oh no" to myself😅. We usually use a stick to get the oysters individually, to avoid getting the fermented salt water.
The green jellies in the macaroni salad is actually a fruit! It is colored green, but it usually comes translucent white. It is called Kaong, a kind of palm fruit

I am going to explain the Kuala Lumpur Its also traditional food in Northern India A Small state named manipur It shares it's land boundaries with Assam In our Language we call Yongchak And the dish name is eeronba It is a tasty delicacy Where the Stinky beans are soked in water and then we Add potatoes ,Onions ,Natural Vegetable etc And then the ingredients are squished by hands Sometimes In gloves and bear hands If you think its Discusting We perfectly wash our hands before it It is than dipded in spicy sauce .And waalaa We eat it with rice And Fired fish are highly-qualified remccomended If you wanna try pls try if possible From northern India Manipur ❤

You eat the fried tuyo in small piece together with the champorado. You don’t take a big bite for the whole tuyo because it will be real salty and funky. You can’t savor the umami of tuyo if you eat as chunk.

When we eat bagoong sisi, we rinse it first with water, then another round of rinsing in white vinegar. after the last rinse to remove the vinegar, that's when you put kalamansi, diced onion, diced tomato and sometimes, with diced cucumber. you serve it as a side dish with a main viand. :)

Tiyula itum has resemblance to some Malay currys given the proximity from where the the dish has orginated. It is actually a hearty soup. That black and green stuff maybe does not look appetizing but the dish is great.
As a citizen in Malaysia my favourite dish is sambal petai and i am grateful if tourist can taste the deliciousness of it instead of disliking it just by it smell
