    I have a deep fryer cast iron skillet with the original lid, and a National brand skillet and a small wapak Indian name cast iron skillet, there old/ antique. Thanks for sharing your collection. I got them all three free at an auction 3 years ago, some lady didn't want them in the box lot almost threw them away so my friend that's an antique dealer took them, I said to him I'll use them at my house.

    Three dollar pan is a BSR Red Mountain series. Good old stuff. Treat it well and your great grand children will be cooking on it.

    i love the looks of your grandma's wagner. Personally wouldn't clean it with the electrolysis

      It only reverts iron oxide back to iron, no damage done. Unless you flip the wires.

      Electrolysis is proven safe and frankly best and easiest way to clean cast iron. No damage with heat or grinding.

    Is it possible to stew tomatoes and other products containing acid in them?

      You can cook with tomatoes here and there (as an ingredient aka chili) but not outright stew tomato sauce for a long time, no. Depending on the quantity of tomatoes you wouldn't want to go passed 10-15 minutes or it'll start stripping the seasoning and give a metallic taste to your food.
      But i have cooked with tomatoes just fine, as in, adding chopped tomatoes to rice (added later in the cook to maintain freshness and not go over 10-15 minutes), deglazing with wine for pan sauces, cooking Greek-style lemon potatoes (again, the lemon was added near the end of cooking)... that kind of cooking works just fine.
      ust be a bit mindful, have a good seasoning base and don't go overboard with the acid and time.

      Yes you can, as long as it’s well seasoned. You will probably want to reseason again afterwards.

      This is such a great question for many reasons.
      Cast iron pans are extremely versitile cookware, and they're often pitched as being "universal pans." You can use them on all types of modern cook tops including gas, glass, induction as well as the common radiant coil design. Iron pans can also go from stove top to oven without issue.
      However, a piece of cookware, regardless of the material it's made of, is just a tool. Just like any tool, inside or outside of the kitchen, each tool has its own purpose.
      Consider a cordless electric drill vs a standard hammer. A lot of people would say that the cordless drill is much more versitile than the common hammer, because it can do so much more than a hammer can. But, would you use a cordless drill to hammer a nail?
      You absolutely can - you can slam the body of the drill into the head of the nail, eventually securing it in place. But in doing so it's highly likely that you will damage the drill or the battery beyond repair. CAN you use a cordless drill as a hammer? Yes, you can. Is it wise to do so? No, it's not.
      Cast iron is the same.
      Can you Stew an acidic sauce for hours inside cast iron? Of course! But, the proper question to ask is whether or not cast iron cookware is the correct tool for the task.
      Besides the damaging effect of the acidic contents on the layers of seasoning, using a heavy bottom pan to slow cook tomatoes is just bad form. You want a gentle, even heat. Therfore, cast iron pots or pans are automatically ruled out because of their damaging effects on the sauce, rather than effects the sauces have on the cookware itself.
      Would you flip a burger with tongs? Would you serve drinks in bowls? Would you cook pasta in a steamer basket? All of these kitchen tools are viable options. It's possible to achieve a similar end product by using them - but would you?
      Cast iron is the same. You CAN use it the same way you would use stainless steel, or even aluminum cookware. However, in doing so, it would be similar to driving a nail by pounding it with the base of a cordless drill.

      originally 4 coats of flaxseed oil, then I wipe them down with butter while they are still warm after cooking.
