    EID SPECIAL - EASY ROAST LEG OF LAMB
    2kg Lamb Leg, with the fat cap on
    Eid is just around the corner and if you Havnt got your menu ready, then I think this is the one 💁🏻‍♀️
    The oven does all the hardwork so you don’t have to.
    A simple marinade using ghee and the right cooking technique I've got you covered.
    Whilst you are more than welcome to add whatever you want I think these spices are more than enough to give you the perfect roast without overpowering the taste with lots of South Indian spices.
    Ingredients:
    🧄2kg roast leg of lamb from @saffronalley with the fat cap
    🧄1tbsp salt
    🧄1tbsp red chilli flakes
    🧄1tbsp white pepper
    🧄1tbsp mustard
    🧄2tbsp red peppercorns
    🧄4tbsp ghee
    🧄lots of garlic with skin on
    🧄fresh rosemary from the garden
    Choice of veg:
    🧄lots of garlic with skin on
    🧄5 red onions with skin on quartered
    🧄2 red peppers
    🧄2 orange peppers
    🧄optional potatoes if you fancy carbs
    You need baking paper, foil and a tray.
    1. Score lightly across the fat cap , criss cross pattern all over leg of lamb
    2. Combine marinade and rub all over. Don’t forget the back.
    3. 200°C for 1hour point in the oven. First wrap leg with baking paper and then foil. No gaps.
    4. After an hour take leg out, let natural juices flow all over tray. Add veggies
    5. Wrap the tray using same baking paper and foil .
    6. Add 3 cups water for gravy
    7. Continue cooking for two more hours at 180°C
    8. Serve like a charcuterie board
    9. Enjoy tender lamb and delicious roast vegetables with delicious gravy
