  • 跟朋友一起合買了整箱的豬大腸. 分裝好了之後, 終於拿一包出來做糯米大腸. 分別做有花生跟沒有花生的. 把比較粗的拿來做. 其他的另外滷好以後可以用.
    I shared a box of pig intestines with a friend. Divided them into 4 bags and kept in the freezer. Finally I took one bag out to make this sticky rice sausages with and without peanut. Use the thicker portion of the intestines. I stewed the remaining and kept them for future uses.
    無意間發現新的灌法, 就是在水裡用. 這樣也蠻容易做的. 灌好之後, 先在滾水過水, 再用小火加蓋悶煮. 最後在悶過就好了.
    Found a new way to stuff the intestines, which is to stuff in the water. Easier to do without additional tools. Once finish stuffing, dips in the boiling water before releasing them into the water. Then turn to small heat with cover and simmer to cook. Finally keep the sausage in the hot water to cook through.
    材料 Ingredients:
    豬大腸 Pig Intestines
    啤酒1瓶 A can of beer
    麵粉適量 (影片用過期的章魚燒粉) Flour or in this video, I used expired tacoyaki flour
    糯米約5杯 Sticky Rice about 5 cups
    花生1杯 Raw Peanut about 1 cup
    油蔥酥適量 Fried Shallot
    鹽適量 Salt to season
    作法:
    1. 大腸先用水洗過. 先把大腸翻面
    Wash the intestines with water a few times. Turn the intestines inside out
    2. 倒入啤酒抓洗過
    Pour in the beer to rub
    3. 平常用麵粉, 這次有包過期的章魚燒粉. 拿來洗大腸. 粉跟大腸抓過, 洗去黏液
    Add the flour, rub the intestines with flour to remove the intestine mucus
    4. 沖洗過後, 再把大腸翻面
    Wash with water, then turn back the intestines
    5. 記得準備好糯米. 洗好泡水
    Remember to prepare the sticky rice. Wash a couple times. Then soak in the water before use
    6. 繼續用粉抓洗過大腸外邊. 再用水洗過
    Continue cleaning the intestines with flour. Rub and wash clean
    7. 把粗跟細的部分切開
    Cut away the thinner parts
    8. 煮1鍋水, 把花生煮過
    Bring a pot of water to boil to cook peanuts
    9. 煮20分鐘. 熄火泡著
    Boil for 20 minutes, then keep in the hot water before use
    10. 拿出適量糯米跟花生混合, 加一些油蔥酥跟鹽抓過
    Drain the peanut, add some drained rice. Also fried shallot and salt. Mix well
    11. 直接讓糯米在水裡, 塞入大腸. 順手後就比較快了
    Stuff the intestines with sticky rice with water. It gets easier once you get used to it
    12. 先把沒有花生的灌好
    Finish stuffing the sticky rice sausage without peanuts
    13. 煮一鍋水. 手抓著大腸的兩端, 再滾水裡過2-3次, 再放入水裡
    Bring a pot of water to boil. Hold on each side of the intestines, dips in the hot water 2-3 time before releasing it to the water
    14. 放好, 加蓋. 轉小火悶煮1小時
    Cover. Turn to low heat and simmer for 1 hour
    15. 時間到後, 關火在悶1小時. 然後起鍋放涼
    Once the time is up, turn off the heat and soak in the hot water for another hour. Then remove from the pot and let cool
    16. 在煮沒有花生的大腸時, 把有花生的也準備好
    Once waiting for the first pot to cook, make the ones with peanuts
    17. 一樣在水裡塞大腸
    Also stuffing the intestines with water
    18. 等沒有花生的大腸悶好. 煮有花生大腸. 一樣抓著大腸兩端, 過水再煮
    Once removing the ones from first pot, cook the ones with peanuts. Same way and hold the intestine on both side. Dips a few time before releasing
    19. 加蓋, 小火, 悶煮一小時. 之後再熄火悶一小時
    Cover, turn to low heat and simmer one hour. Then soak in the hot water for another hour without gas on
    20. 煮好起鍋放涼即可
    Remove and let cool once done
