  • Soft, slightly chewy, no need to knead; gluten-free, dairy-free, egg-free, soy-free, no added binders.

    Ingredients:
    200g Rice flour
    180g Tapioca starch
    60g Pea protein powder
    2 tsp Instant dry yeast
    100g Mashed potato
    320g Water
    20g Sugar
    30g Rice bran oil
    6g Salt

    I just made it and it is incredibly delicious!! I can’t believe how close the taste and texture is to gluten white bread!! Thank you for creating this! I’m never buying white toast bread again!

    I have her cookbook. I have used this recipe many times. This tapioca gel was so good that no binders were required to make gluten free breads, and the ingredients can easily be replaced. I made multigrain breads and they were all delicious. Thank you Lucy for your great work!!!

    Thank you for the recipe.
    I want to try it without protein powder. If I change it with soy flour, will it work and how much? Or do I need plant protein powder so the dough will proofing better?

      I used soy flour to replace the pea protein at a 1:1 ratio in making whole grain loaf. It worked very well. Protein holds it's shape better when baking bread.

    Lucy if I want to replace steamed potatoes with dry potato starch, what should be the substitution? And change in water content?

      The purpose of steamed mashed potatoes is to improve the taste of rice flour. Please do not use potato starch instead.

      Yes,you can. But for better taste you can substitute mashed potato for mashed sweet potato or yam.

      Pea protein powder contains about 80% protein. I don't think it can be replaced by the flours which have low protein.

      @@nirmala15 I haven't used the active dry yeast. This type of yeast needs to be rehydrated before using. Almond flour can replace part of rice flour. I mentioned it in my book in some bread recipes.

      Yes, but in my book there is a little adjustment to the amount of ingredients. I will post a video of making loaf in a dutch oven.

      Pea protein powder is made from peas. Its protein content is relatively high, about 80%. I bought it at the supermarket. It's also sold online.

      In my gluten-free bread recipes I use less starch than most other bread recipes, less than 40%. Typically gluten-free bread recipes contain 50% starch.

    Can I use other sweeteners such as maple or coconut instead of white sugar? Does it have to be granulated, or can it be in liquid form? Thanks.

      You can use raw sugar, coconut sugar. If you use maple you need to adjust the amount. It will change the moisture of the dough.

      You can try it. Recently I used this recipe to make grain-free loaf and replaced protein powder with soy flour. It worked very well.

    Hi, I am about to make this bread, however, I weighed out the mashed potatoes before I put it through the sieve. I now have 89g for my recipe. Can I add 11g of potato starch to make up for the shortage of mashed potato? Thanks for the response. By the way I am Nana Lucy 😊.

      You can use rice protein, soy protein, whey protein, egg whites or soy flour.

    @Lucy, just reconfirming, you did proofing 3 times with Instant Dry Yeast? I thought Instant Dry yeast is for use without proofing. Was it instant dry yeast or active dry yeast?

      The use of instant dry yeast in dough fermentation requires proofing, but does not require the process of dissolving the yeast. You can proof the dough once, but the bread tastes better with multiple proofs.

      Egg whites or other protein powders can be substituted for pea protein powder. Protein is an essential ingredient that maintains bread's structure while baking.

      @nadiaandreeva4628 Keep away from heat while making tapioca gel. The dough should be soft, if not, add some water. Hard dough will not rise. After the bread is done and cooling for 2 hours, put it into a food bag for 4 hours before slice. The crust will be soft.

    Hi there can I replace the pea protein with pysillium hush powder? I don't have pea protein powder and I don't have any yeast...so I also omit the yeast? Thank you and wonderful video!

      This receipt is for people who can't eat psyllium husk. Protein powder and yeast are essential ingredients.

    Hi , thankyou so much it helped me a lot , the bread is very tasty , but only thing is it turned bit harder outside , may be because I used topioca flour instead topioca starch . I will try one more time anyway , but really the taste is awesome tq anyway.

      You're welcome! Leave the bread in the pan for 1 hour while it cools on a rack after baking without removing the pan. After the bread has cooled, put it in a grocery bag at room temperature overnight so that the outside will soften.

    Looks like a nice recipe. (As an aside, I wish people would stop using plastic disposable gloves when then cook -- it makes a hell of a lot of garbage over time)

      Most home cooks who wear plastic gloves either have sensory issues or skin sensitivities... There are much worse and more significant entities that should be criticized for plastic use

      If everyone is using one-time-use disposable plastic gloves for each meal prep, it causes a massive issue. It's a pretty big, significant problem which is ending up in the ocean. It's worth a comment.

      I am also very bothered by single use plastic. However, I also have a skin condition and always wear “disposable” gloves during food prep. I can wash my gloved hands repeatedly without suffering consequences. I can also reuse the gloves many, many times before throwing them away. I wouldn’t always assume that the gloves are being used once and thrown away in applications such as this.
