The Humdinger is our third recipe in The 12 Cookies of Christmas (and recommended to me by my friend Angelica). When she told me about this recipe, I had a hard time imagining how these would turn out, but I was super surprised that they were really easy to make and quite delicious!

Humdingers Cookie
INGREDIENTS
1 stick of butter
¾ cup of sugar
8 oz of chopped dates (14-15 dates)
1 tsp vanilla
2 ½ cups rice krispies
1 cup chopped nuts
Powdered sugar for rolling
DIRECTIONS
Using a silicone spatula, melt butter and sugar over low/medium heat stirring until combined (around 2 minutes).
Add in dates and cook for about 5-7 minutes or until the mixture caramelizes.
Remove from heat, add vanilla, Rice Krispies, and chosen nuts.
Allow mixture to cool slightly before using a scoop to shape into uniform balls.
Roll each ball in powdered sugar.

Yes, chopped pecans!
I love the pinch of salt- I just use salted butter.
If you overcook, they don't stick together as well.
These are the only thing with dates Chloe will eat.
If you pack tighter, they are more solid to chew- we do a mix or tight and loose. And yes, the powdered sugar should fall all over the place!
We make those each year and it was fun to watch you make them- you nailed the recipe!

My original recipe has
2 sticks butter (actually it said oleo or parkay!)
1cup sugar
8oz dates
2cups Rice Krispies
1cup pecans
1tsp vanilla
We only boil for 1-2 minutes because we have made hard crunchy humdingers before by over boiling.
