Everything looks so good! The last time I was prepping fresh broccoli, I decided I needed to try to do something with the stems. I peeled them with my veggie peeler, cut them into sticks, and stored them in water. I ate them in salads and I ate them as a snack dipped in ranch dressing. I was surprised at how good they were and felt ashamed that I’d been throwing them away!
I have a legit 30 minute meal. Stove top stuffed peppers (spicy rice according to my fam). Brown 1 lb of ground beef (or whatever ground meat you like. Have used leftover taco meat), add 1 can of tomatoes with chilies (undrained any heat),1 can of beef broth, and 2 lightly chopped bell peppers any color)Bring to boil. Add 2 cups minute rice, stir, cover and reduce heat to simmer for 5 minutes until rice is tender. Remove lid and sprinkle with cheese, cover until cheese melts, or put it under the broiler. There’s tons of time savers for this recipes and you can substitute any kind of meat. I’ve added chopped onions a few times, and you can slice your bell peppers thin then cut them in half. Beef cubes and water works as long as there’s enough moisture to cook the rice. If you substitute chicken use chicken broth. Thank me later
I don't remember where I got this black bean salsa recipe maybe here from one of your videos but a can of black beans rinsed and drained, a can of whole kernel corn drained, one small can of green chilies (3oz), 2 diced Roma tomatoes, 1/2 diced avocado, 1/4 c. diced onions, 2 tbsp. olive oil, and your fajita seasoning that you used for your chicken sprinkle a tsp over the salsa to give it that tie in to your fajitas. (Otherwise a tsp of packet fajita seasoning will work, or taco seasoning) I find this a very hearty salsa and have often used it as a base for a salad. I've added lettuce to a plate and served the salsa on top, even adding in a can of chicken makes a great meal all on its own. And it really isn't a budget breaker.
