If you look up refurbishing of Japanese knives you'll find knife straightening sticks. Easy to make and could help you to carefully straighten the pairing knife. Great looking set! I have a smaller wusthof chef knife from a thrift shop and it stays sharper longer than any of my other knives.. they use good quality steel.
Hey, one dumb question, but when buying used kitchen knives, are you supposed to clean them in a specific way the first time before using them? Can't find anything on Google.
