How long did the custard foam last in the fridge after you added the nitro until it died (became limp, unstable, or just became gross) Wanted to see how many days of cocktails i could get out of this
It all depends on the individual ingredients if you want to extend the shelf life so it lasts well over a week use homogenised and pasturized eggyolks usually comes in a container looking like a jug and lactose free cream that has been ultra pasturized. Both of these have a shelf life in the fridge seperatly for around 2-3 months. We use this a lot for our dessert foams where I work.
Tried it today - and I have to say, it's really good. At first I was a bit hesitant to basically put "vanilla sauce" on top of a cocktail (I'm not the biggest fan of foams on cocktails), but it worked wonderfully.
Making this for my family this Christmas. Any idea how many servings of the custard this makes? Is it okay to make it the day before or is it best to just make it day of? Cheers!
Can you suggest alternatives to the bitters? Maybe some homemade ones you have already on the channel? Looks delicious but the supply of bitters where I live is non-existent 😅
I love these, and I love the idea of getting a foam on top of my cocktails. You ought to have a link to the cream whipper you used. I could find one on my own, but if you're using it, I'm sure it's a good one.

Did this tonight, Christmas Eve, but I did the fat washing with bourbon, and it worked out great! So good!
