Really great information! I’ve noticed a trend in bbq restaurants using more efficient smokers and have definitely noticed a decline in the smoke flavor. There’s definitely a trade off with highly insulated smokers.

I did a " scoop" mockup on my 500. It added 3.5 hours more to my brisket cook. Have no idea why
