  • Instantpot recipe - Pork and Kimchi Stew
    Kimchi stew, a Korean soul food, is generally more rich when eaten the day after boiling. When you boil it with an instant pot, it tastes just like it. Let's make delicious kimchi stew together.
    Ingredients:
    1/4g of kimchi (530g), 400g of pork neck, 1 green onion (70g), 1 1/2 onion (400g), 2 chili peppers, half tofu, 1 tablespoon soy sauce, 1 tablespoon minced garlic, 1 tablespoon salted shrimp, 1 tablespoon sugar, 2 tablespoons powdered chili peppers
    The most important ingredient in kimchi stew is definitely kimchi. Use well‐pickled kimchi with a sour smell. I used the precious kimchi that my grandmother made for me.
    1. First, trim the vegetables.
    I used one and a half onions because they're small. If it's a big one, I think it's okay to use just one.
    Leave some green onions for decoration later. Adjust the red pepper as you like.
    2. If you bought meat for stew, you can use it as it is, but I bought it in lumps of pork neck so I cut it into easy-to-eat pieces!
    Kimchi stew tastes better with a pork fat.
    3. Cut kimchi so that it's easy to eat.
    If the kimchi smells bad, it's better to shake off the insides.
    I just used it because it is well ripened.
    4. Now, turn on Saute mode, sprinkle 1 tablespoon of cooking oil, and fry the meat first.
    Add minced garlic and green onions together. Stir-fry well so that the oil goes well together.
    5. Stir-fry the onions together with kimchi.
    Lastly, add a ladle of kimchi soup. I added 200g of water and 200g of anchovy stock. If you don't have anchovy stock, you can just add rice water or plain water.
    6. Put in the chopped chili peppers, 1 tablespoon soy sauce, 1 tablespoon salted shrimp, 1 tablespoon sugar, and 2 tablespoon powdered chili peppers.
    If you don't have salted shrimp, you can add fish sauce or just add more soy sauce. Actually, the seasoning will depend on the kimchi of each house. Don't make the taste too strong at first, but add more to it later.
    7. Now close the lid and set it to Pressure Cook (Manual) mode for 10 minutes.
    8. Cut tofu into easy-to-eat sizes while kimchi stew is cooked.
    9. When cooking is done, force the pressure out. The kimchi stew with very tender pork is ready now. Add tofu and boil it in Saute mode. Taste it and add the missing taste.
    10. Now, you can put it in a good way and enjoy it. I put it in a small pot and ate it. The deep soup of kimchi stew tastes really good.
