Ingredients for Surmai Fish Fry:
Fish Steaks - 500 gms (King Mackerel/Surmai/Vanjaram)
For the Masala Paste:
Turmeric Powder- 1/2 tsp
Red Chilli Powder- 1 tsp
Coriander Powder- 1 tsp
Kashmiri Chilli Powder- 3/4 tsp
Pepper Powder- 1/2 tsp
Garam Masala Powder- 1 tsp
Salt- 1 tsp
Ginger Garlic Paste- 2 tsp
Lemon Juice- 2 tsp
Oil- 1 tbsp
Water- 1 tbsp
Oil- 5-6 tbsp (for shallow frying)
Preparation:
Wash and pat dry the fish pieces.
To make the Masala paste, take a small bowl and add all the items specified, mix well.
Now apply the masala paste on both sides of the fish steaks and set aside for around 30 mins to marinate.
Process:
Heat oil in a frying pan and place the fish steaks side by side.
Fry on medium heat for 3 mins on one side and turn it on the other side. Continue to fry on medium heat for another 3 mins on the other side.
Flip again and reduce heat to low. Fry it on low heat for 2 mins.
Turn the steaks one last time and fry it on low heat for 2 mins till evenly brown.

One traditional tip from Kokan region. Apply ample amount of salt on fish and set them aside for 30 mins. Afterwards wash the fish clean of salt. The fish will be marinated with salt. Then apply your marinate. In this way the flesh does not taste bland and marinate will add cherry on top.

Omg!!Surmai fry is the best among all fishes....I like it coz its stiff and not mushy...we make it with tamarind paste and no garam masala...but im surely going to try this...more variety, the better. Thanku so much dear and stay safe 😊👍

Also, I've have had the freshest possible since I was an offshore angler for 13years and to catch and almost immediately cook fish on board a boat without icing it is something not too many people have had the good fortune to experience. My friends and I have caught on rod and reel large Surmai (King Mackerel)i, Cobia, Tuna, Sonaf (Pompano), Speckled Emperor (Mulla), Kund (Barracuda) and many more species. Thank you for sharing this recipe and I'll definitely be trying it out since I have never used Garam Masala for fried fish. The presentation in your videos is excellent. All the best!

Yooo I do the same marinade as second marinade but instead of pan fry i cooked it in the oven. The skin crisps up and its great! The first time I did it I was surprised myself as I got the fish and a friend made the marinade and it tasted pretty good for something thrown together. I added lemon later though in the grill
