I’m pretty new to the fermented hot sauce game, but I have to say- your videos are amazing! Very informative and well done.
bottle filling machine what kind and where did you get it?
Okay, I just bought and tried this sauce. Simplistically, it is gourmet suuuuper hot sriracha, but that really doesn't do it justice. That's just the benchmark most all will understand. What kills me is that the flavor is every bit as potent as the heat, and it's freaking crazy hot. Just wow. This is a masterpiece creation. Some people won't get past the heat. Understandable because, damn. BUT, if you can handle hot things this will bring you some flavors that have only been hinted at with other sauces. To me, this is what most every hot sauce has ever promised and failed to deliver. This is a masochist's dream, pain and flavor euphoria. Effing well done dude.

GOOD DAY, we run the same machine, we have problems with some sauces, have you had issues with any chunky sauces?
Yeah every once in a while when we get to the end of the bottling it gets really thick.. so we stir often at that point
Hi i have been bottling my fermented hotsauce and i have pasteurized the sauce before bottling but it still builds up air in the bottle causin an ocassional bottle bomb. How can i stop that?

Does the blender pasteurize the sauce ?
Yes.. the VITAMIX blenders will heat the sauce to whatever temp you want on the high setting. I go to 165F ..

I tried the mango habanero hot sauce and it was amazing, super tasty! I'm wondering what can I do with the rest of the brine that I didn't use for the sauce...? It actually tastes good but any idea appart from drinking it?🤣😅

for a fermented hot sauce if you don't pasteurize the fermentation will continue in the bottle and can explode.. you don't want that.. trust me.
Hello, how the vitamix pasteurize ? And how can you go to 165
on the high setting the vitamix heats the liquid to 165F.. this pasteurizes the product..
