Can someone explain to me how Moebius is playing the electric organ? Is he using effects, tremolo or something? How does he change the attack and sustain of the notes the way he does. I can't wrap my head around it.

probably a build-in sustain and stuff
schaller tremolo - my only guess. your idea of seeing it as an attack/decay means this was possibly the answer. they only had certain fx.
