Nung bata pa ako gustong gusto ko sumama sa palengke ng cavite city kasi nagppabili ako sa nanay ko ng bibingkoy ni aling ika 🫶🏻 Kaya marunong ako sa palengke tumawad at bumili doon sa mga mura.
My mom and I would leave Manila at around 6am, back when the old Saint Anthony and Saulog buses still passed in front of PGH. Once I saw the Heroes Arch, I know we were there. We'd head straight to the public market. Buy an order of pancit palabok each, and a serving of bibingkoy to share. Then we'd buy another batch of servings, this time for lunch and as pasalubong for my tita, who was the real reason why we're City bound 🤣 We'd also buy some kesilyo [not sure how it's spelled 😅], some rock salt [for bringing home. I swear, it tastes different from the salt we could buy from our local palengke] and sometimes tahong, for my tito to make adobo out of. Before going home, we'd ride the jeep to Padre Pio Street, buy 2 boxes of Samala [which my mom knew I could easily eat at least half of on my own] and take a bus ride back to Manila. Simpler times... Happier times. My mom passed in 2017... I've never been back to the City since then...
Bibingka pertains to the way it was cook.. bibingka does not pertains to the “Christmas” bibingka alone. Bibingkang tinapay, bibingkang bigas, bibingkang galapong, bibingkang kamoteng kahoy to name a few..
Agree. In Pampanga we have a kakanin called bibingkang kanin, it's like white biko but the way it's cooked is same as the xmas bibingka with a toasted sweetened coconut milk topping.
Sadly rice fields are gradually diminishing in Cavite because of the industrial expansion and increasing housing projects. Farmers are selling their lands kasi nga mahirap buhay as a farmer and their kids would rather pursue other career/business than toil the land
