There are two types, brown jambalaya and red jambalaya. The brown is by far the most popular in Louisiana. This is brown jambalaya (Cajun style). In New Orleans restaurants, and out side of Louisiana red jambalaya (Creole style) seems to be the most popular. At the Jambalaya festival in Gonzales, just an hour’s drive northwest of New Orleans tomatoes aren’t even allowed, only brown jambalaya is sold there.
Always like watching big pots of jambalaya being made. I don't know why, I guess, to me it means, there's about to be a party going on. 😃. Nicely Done. Thanks for sharing. 😎🇺🇸

Yep, if not using Tasso, use some paprika and a nother smoked meat, like chicken or Turkey, or even diced ham.
