Also consider the amount of ruffles and additional piping you are planning for the cake. In other words, if you want to guarantee you have enough to do extra piping or larger ruffles, then I would either double that recipe or do one and a half times that amount.
I would suggest cutting straight through it around like a pie/pizza and then slicing those pieces into 2 or three pieces depending on how many servings u need.

I would suggest a recipe with 2 pounds of butter/shortening and approx 3-4 lbs of powdered sugar depending on how thick you want the icing.

How far in advance can I make this? Does can it sit out on counter if made the day before?
U can bake the cake and ice it the day before and it will be fine to sit out until the next day as long as it’s in an air conditioned space :)
That’s if u use a buttercream like the crusting recipe I use that does well without being refrigerated.
