Excellent explanation, thanks Jason, and thanks GA. Not wishing to quibble but I want to add that even in the travel casks era they still weren't ex-solera casks, for the *most* part. Solera casks were/are *all* butts, *all* US oak, and *all* inactive/neutral wood. Then and now. No need for bodegas to pay loads extra for European oak given that a neutral US oak cask "tastes" the same as a neutral French/whatever oak cask. No solera sherry is ever made from/in active casks. Like now with seasoned casks, travel casks were still casks made/picked by bodegas--specifically for shipping purposes--and distilleries were able to select what size, wood type, level of char, which sherry "seasoning", etc., similar to now. One (main?) difference is that for X months the travel casks held "drinking" sherry prior to being bottled in the UK (or other market)--and "drinking" sherry in the past came in a range of price points, most of it cheap and only a little of it high quality--whereas now the casks are often seasoned with pre-sherry-vinegar, etc. which is "less better" than even cheap drinking sherry.
There were exceptions, however. I read a couple of months back that Dailuaine distillery were/are noted for being particular in selecting ex-solera butts. The result was they were using neutral wood--in terms of its wood flavours/colour/influence, not its sherry flavours/colour/influence--and it showed in the style of whisky that resulted. They won't have been the only distillery that did that, maybe mixing some active "seasoned" casks with the inactive ones. Kilchoman's drambassador (or whatever title) 2-3 years ago claimed they use only ex-solera casks--besides the ex-bourbon ones, that is. What I didn't (then) know to ask her was to explain how some of their whiskies displayed such active wood character, given that solera casks are all inactive US oak. Sanaig batches vary a bit but there's a fair bit of active wood used, and only 30% are ex-bourbon casks, the rest Oloroso sherry.
Re. whiskies showing a range of sherry styles, I think Tomatin did such a few years ago. I still haven't got round to opening the Amontillado. Tomatin also did--part of same series or different?--other fortified styles and some wine finishes. The Tomatin website, under limited editions, talks about Italian and Portuguese "Collections", but before that there was a range of different sherry types, perhaps a Spanish Coll, and I think also a French Coll?
In earlier iterations GA had both "wood" and "wine" finish collections. It doesn't make much difference but it still seems odd to have chosen the word "wood" to distinguish them given that all whisky is matured in oak wood. I'd have used the word "wine", but maybe they're planning on some non-wine ones?

Interesting review Jason. Kavalan has done a similar series with their Solist range (fino, moscatel, amontillado, Oloroso and one more I can’t put my finger on). Also, Springbank did a wood cask series in the early 2000s. Both interesting projects and produced some great (and some not so great) results. I guess SB is doing it again with their current 10 year sherry series. Agree it would be fun if a few more did something like this. Cheers.

Outstanding and interesting review Jason! Glenallachie released a US exclusive 12 year Port a few years ago. I love GA but this was just OK. Not enough “wow”! The darker OB 12 much more interesting. Would try your suggestion if these make it here. Thanks once again! Neal

    Hi Jason
Loved your review as always, but what?? You don't like coffee ???😢I drink my coffee as I'm sipping my scotch, instead of water, you should give it try, put some cream and sugar in it,and try it out, its a blissful experience for me, I mean it may not sound good but for me it's just a great treat, I do this on every sip of my favorite scotch. I know where a bottle of deanston 2000 fino cask is,but I'm not sure if I want to pay $506.00 dollars for a bottle, first just let me say that I'm a deanston fan boy,but fino scare's me since I don't know what it tastes like, I know its got a mouth puckering sensation and dry if I understand you correctly. I'm not worried about the price per say,but do you think it would be a no go for you, you have more experience with fino than I for sure, I bought 2 bottles of the irishman 17 year old, I it was so good, the place I bought it was expensive, but worthy of it's price tag, I look forward to your answers, I trust you're palate when it comes to scotch, I watch all of your videos, love your reviews,so keep up the great reviews, and I will continue to watch 😅🎉❤❤

I would try something much less expensive with fino, before buying the deanston for $500+. OR even just a bottle of fino for ca. $20

Interesting , even though its not sweeter than PX so perhaps it needs a little more experimentation from distilleries to get the best out of it
