i’m a brit so thanksgiving is such a foreign concept to me ! my mum would always tell me this story of when she was in the US for uni and my dad ( her then boyfriend ) went over to visit . they were staying in the north east and this family they met that day just invited them round for thanksgiving the next day . apparently they went over and had a lovely time with this whole extended family who they had known for a day ?! something about it really stuck with me , i guess just the massive sense of community and friendliness of the holiday ? i hope you have a lovely thanksgiving !! 🙏💗
When I was much younger, I found myself in Edinburgh on Thanksgiving. I was staying at a youth hostel. There were about 6 US Citizens and we decided to make a Thanksgiving meal for everyone in the hostel. We went all over Edinburgh looking for a turkey that wasn't frozen. The last butcher shop we went to - the butcher baked a turkey every Thursday. We bought the whole bird and got all the other stuff. We had to explain to the guy from Louisiana that cider had a liquor content and we couldn't take it in the hostel. On our way home to the hostel, we had lunch. Haggis, tatties, and neeps. It was a HUGE food day, but a nice International celebration of gratitude.
Our stuffing: one of those packages of bread cubes (brown berry or Pepperidge farms), celery, onion, apple, pecans, broth and PRUNES! Then make them in muffin tins….more crispy bits! Stuffin Muffins
Your on the right track with using gold potatoes, they make the best mashed. Little known trick I've come to love someone else turned me on to, use mayo in the potatoes! Improves fluffy texture and the taste! Also what we like to do with the stuffing is marinate it some with the broth used for the turkey, and I buy the Stove Top corn bread stuffing, but we use Jiffy cornbread mix and add additional fresh cornbread to the stuffing, comes out really great. We don't get a big full sized boned turkey anymore either. Target sells a great frozen turkey breast for like $20, we do it in a crock pot and it comes out super moist and tender. I grew up eating full sized birds that were always dry! Also we start cooking the day before, and we're usually done by about 11am Thanksgiving Day, so you get to have the meal for lunch, and an early dinner, and still plenty of leftovers for the weekend. When I was a kid we wouldn't eat till after 6pm usually because everything was started so late, by the time you finished eating the day was over and people spent lunchtime eating potato chips and all kinds of junk waiting for the actual food, don't do that anymore!
I'm trying to come up with a low carb thanksgiving for just my spouse and I. I think I'm going to mash a golden potato with cauliflower to cut out some of the carbs. And might get a little fancy with a Waldorf salad.. I want some energy to go see Christmas lights after dinner lol.
I really miss Trader Joe's from when I used to live in Farmington Hills, Michigan. They have so many great and unique things. I haven't been to a Trader Joe's in about five years. There are no Trader Joe's in Duluth, MN, lol.
