    Ingredients:
    Red or white onions: 500 grams
    Vinegar: 2 cups (preferably apple cider vinegar or white vinegar)
    Salt: 2 tablespoons
    Sugar: 1 tablespoon (optional)
    Desired spices (such as turmeric, black pepper, cinnamon): as needed
    Water: 1 cup
    Peel the onions and slice them into rings or julienne strips.
    If you prefer, you can soak the sliced onions in cold water for 30 minutes to reduce their bitterness.
    In a pot, mix the vinegar, water, salt, and sugar (if using) and place it over low heat until it comes to a boil.
    Add the sliced onions to the vinegar mixture and let them cook for 5-10 minutes until they soften slightly.
    Using a ladle, place the onions into clean, dry jars.
    Pour the vinegar mixture over the onions until they are completely covered.
    Seal the jars tightly and allow the pickles to cool at room temperature. Then transfer them to the refrigerator.
    It’s best to let the pickles sit for at least 1 week in the refrigerator for the flavors to meld.
    You can use various spices like turmeric or black pepper for additional flavor.
    This pickle pairs wonderfully with various dishes, especially kebabs and stews.
