So I just bought the Gyuto itame was not sharp out the box and I couldn’t sharpen it with an average whetstone set the super blue was just to hard of a steel which is why I bought it so I got some Shapton glass stones and it’s really sharp now i need to go higher in grit to get it where I want it but besides it coming pretty dull it’s phenomenal
OK fine ! I don’t really cook, I’ll never be a chef, have zero silverware at home HOWEVER- I am a Spyderco FREAK!!!! I’m eyeing the set ! Why not just put one in your vehicle as a car defense weapon to have on hand ? Why limit to in the kitchen I think these blades have worlds of possibilities!

The Gyuto is more than a Masamoto KS.. the most sought after Japanese knife line in the biz... There are way overpriced, and not worth it.

Great job. I know you made past knife sharpening videos but did you change any techniques when you got new stones?
Wish they made a nice fixed blade EDC with Spyderco, Murrays knives are pretty hard to find in Europe.
Bierkameel That is actually pretty good idea. His neck knife in laminate Super Blue or laminate White Steel would be cool.
I like those knives but I'm not sure if white was the best choice for that separator.
