Kurt I do what you do eve though I've seen something about low temp cooking. High heat pressure cooking or even simmering just above the boiling point will create Glutamates.
The French way is to put vermouth in the broth Plus I like using a small amount of baking soda additionally, along with a couple of tablespoons of ACV I wasn’t aware of the histamine build up Thanks 😊
How do you make it more gel like and still keep it at low histamine? I already tried several times at 1-2 hours in my instantpot but it never gels after I cool it.
Im carnivore since two years now and I do two meals a day and since a few weeks Im always so damn fatigued after my meals and stopped drinking bone broth because of that a while ago, but Im still messed up for 2 to 3 hours after my meals. Do you have an idea what causes this issue?!
Maybe because you're boiling it. Let the bones simmer in a pot for 6+ hours on low, lid closed. At around 200, below boiling temperature. Never boil. This method gets you rich, clear, tasty broth
Would have liked to see the finished product, how you strain it, store it, etc. Felt like we're missing the last 25% of the video.

Don’t you add in onions, carrots etc ? ACV also helps with leeching minerals from the bones

the gel is the glycine from the tendons and ligaments. Are you putting that kind of stuff in there?

yep you need bones that have connective tissue like joints; knuckles etc.
