    Happpyyyy Onam to Everyone!!!!!!!!!!!
    Hope you are doing great!!! Here I am with a new recipe, my favorite delicious and rich Pineapple Payasam perfect for any special occasion! Which gave a very different flavor to our onam this year :)
    Ingredients:
    Pineapple (പൈനാപ്പിള്‍) - 1 ½ kg, finely chopped
    Jaggery (ശര്‍ക്കര) - 400-500 gm, melted and strained
    Coconut Milk (തേങ്ങാപാല്‍)
    First extract (Onnam Paal - ഒന്നാം പാല്) - 1 cup (Thick milk)
    Second extract (Randam Paal - രണ്ടാം പാല്) - 1 1/2 cups (Thin milk)
    Chouari/Sago (ചൗവരി) - 1 small glass, soaked in water about 15-30mins
    Kismis/Raisins (ഉണക്ക മുന്തിരി) - 2 tbsp
    Cashew nuts (കശുവണ്ടി) - 2 tbsp
    Cardamom powder (എലക്ക പൊടി) - 1 tsp
    Dried Ginger- 1/2 tsp
    Cumin powder-1/2 tsp
    Salt a pinch
    Ghee (നെയ്യ്) - 2-4 tbsp
    Preparation:
    In a pan, heat 2 tbsp of ghee, fry the cashew nuts & coconut pieces until golden brown and add the raisins. Fry until the raisins puff up.
    Prepare the Pineapple:
    Chop the pineapple into small pieces. Grind the pineapple into puree without adding water.
    Into the same pan add the pineapple puree and mix it nicely.
    Add Jaggery:
    Melt 500 gm of jaggery in a little water, strain to remove impurities, and add it to the cooked pineapple. Let it simmer for a few minutes until the jaggery thickens and blends with the pineapple.
    Cook Chouari:
    Soak the sago (chouari) in water for about 15-30 minutes, then cook it in a separate pan with water until it turns translucent.
    Add the cooked sago to the mixture and stir well. Let it simmer until everything blends together.
    Mix Coconut Milk:
    Once the jaggery and pineapple mixture is cooked, add the second extract of coconut milk (Randam Paal) to the pan and let it cook on a low flame for a few minutes. Stir occasionally.
    Add roasted Dried raisins, cashew nuts & coconut pieces, and give it a good mix
    Sprinkle cardamom, cumin seeds, dried ginger powder, and a pinch of salt and stir well.
    Add the first extract of coconut milk (Onnam Paal) and mix well. Keep the flame low and make sure not to boil too much the mixture once thick coconut milk is added. mix well, and serve warm.
