Sir - I follow your preparations a lot and respect you immensely as a chef but I am sorry to say that Junglee Maas is not prepared this way traditionally. It is made only with 4 - 5 ingredients - Mutton, mathaniya chillies, whole cloves of garlic, salt and a little dalchini, green cardamoms and big cardamoms for tempering in ghee...that's it. The mutton is slowly roasted along with the whole ingredients with the occasional addition of water. It is a very rustic dish and there is no addition of onions, ginger-garlic paste or dhaniya-jeera powder.
Fun episode. The Jungle Maas i've always eaten (also cooked a couple of times) is the dry one fried in ghee with garlic and whole mathaniya chillies. Handi in Jaipur makes a mean one!
If I get 2 options...one for free world tour and free foods or enjoy this type of cooking in the jungle with a mind blowing story teller Ranveer Brar then I am gonna choose the second option every time. Sometimes I use to cook food on coal tandoor in winters and that time I feel like heaven on the earth.
This cooking show is so unique from all others. Such mind relaxing. The background score also goes apt with the theme. Beautiful in simplicity
