I'm from Hungary and we make sprout the wheat like this, then grind it just like this couple. We then separate the juice, mix with some flour and bake it in the oven. So sweet, sticky and delicious.
The pulp we dry it then make flour out of it which we mix with water and bake it in the oven. Taste same like the one made out of the juice but much sweeter.
We call it csiramale or szalados. A traditional dessert at wintertime, two ingredients only, no sugar needed and healthy, full with vitamin B and good for digestion. Yummy

All the sweetener comes from the wheat itself. When the seeds sprouted, the starch in them started turning into maltose - grain sugar
Magyarországon ez tuti nem egy hagyományos étel. Életemben nem ettem ilyet,a szüleim,nagyszüleim sem. Ez inkább vmi erdélyi kaja.
With our modern appliances we might be able to liquidise, then strain the sprouted berries the same through a cloth add flour to thicken the cook stirring all the time until thickened, I don’t think you should add too much flour because as it caramelises it will reduce in volume, I think i will give it a try in a smaller amount! Just wing it.

There is an Uzbek legend for this cultural dish about a very poor widowed woman with two sons (Hasan and Husan) who always cried from hunger. One day the mother grew tired from their crying and asked her neighbour for some wheat and then she took a pot and into it placed 7 stones, water and stirred in the wheat. Her sons heard the noise and became quiet and fell asleep thinking that their mother was cooking a nice meal for them. Some time later the mother grew tired and also fell asleep with the flour and water still cooking in the pot of 7 stones.
When she woke early in the morning she saw 30 angels standing around the pot and licking their fingers. From her excitement she woke up her sons and together they ran to the pot to find it filled with the succulent porridge made in this video. From that point onwards, they were never hungry again.
The name of this porridge called Sumalak which some of the Uzbeks say means 30 angels.
The sprouted wheat is very high in sugar, vitamins and minerals so the dish is a very sweet porridge. Because of the high nutrient content and sugar it's very versatile and is a perfect dish for range of situations from celebrating in festivals to surviving a famine.

Ok guys, I need to explain a bit what she is actually cooking. It is not just a dessert that you eat every day. It is a sacral dish made on very special occasions, mainly during the Spring Equinox and Novruz holidays in the middle of March. This dish represents awakening of nature and that is why it is cooked from wheat seedlings which represent awakening of the green nature and the Sun returning to the Northern hemisphere. Usually, people cook it and share with neighbours and relatives, and everyone who gets it makes prayers and wishes for a good summer season before eating it. And the family who cooks and shares it recieve special blessings from all those who it was shared with 😊 So, I hope you understand it a little bit more now 😊 and by the way, it is soooo delicious you can’t even imagine! This desert is called "SAMANAK". It is specially prepared in the beginning of spring. I think it is a cultural dish of many Asian countries such as Iran, Tajikistan, Turmenistan, Uzbekistan, Azarbaijan, Afghanistan, so on.... You have to cook it for at least 8 hours. It has the most unique sweet taste you would probably know how much sugar wheat contains. The desert is extremely sweet. The sweetness of sugar in this desert comes from the wheat.
Oh so it really is wheat! Over here we call the final product maltose, a very good substitute for sugar in cooling and dipping sauce, adds a unique fragrance to the dishes :P

Because it is Persian. It’s not “caucasus dessert”. She’s being disrespectful by calling it that and denying its origin because It’s a very important and symbolic dish. Yes other countries prepare this too but its origin and true name needs to be respected
Hey we Afghans call this dessert Samanak. This is our traditional dessert and this is exactly how we make it. we make it usually in the start of spring. It take several hours to make. We have a lot of similarities😍

From what I could tell, they sprouted wheat to create the enzyme amylase. They ground up the sprouted wheat to extract the amylase. However, that extract needs to be hot to work. So they heated up the amylase (not too hot), then added wheat flour to the hot amylase. The enzyme breaks down the starches in the flour into sugars. When you cook the solution further, it thickens and concentrates. I would guess that this dish would taste like a semi sweet pudding. Commercial oat milks use this same process to create a lightly sweet flavor in their products. This process was likely discovered in process of making beer, which relies on amylase from sprouted grain also.

I don't think it's burning hot. It's just warm water. The reason it's steaming is because their kitchen is an open kitchen outdoors during the winter, so the warm water is creating lots of vapor.
