As one keely interested in functional design, I would keep the editing space to the right (or left) of the 'kitchen' items, rather than in between. Your work desk may well be one of the most used, best loved areas of your van and deserves highest priority. I can see how the desk would be nice centered over that window, and perhaps it may be, but I would probably be willing to give up a little of that symmetry for an awesome editing spot. I watch a few people on UA-cam who pretty much live in their vans and they spend 2 years turning them from a van to a live-aboard van, which I appreciate is a lot different to a coach built motorhome but you've turned Turtle around in weeks!
I am very happy there were no "expanded" heartaches. That foam sticks to everything and is impossible to get off hands, hair, clothes or wherever else it lands😂👍

You can cut the plywood by laying it on a large sheet of that insulation foam board you used. But don't let the saw blade sink in too deep into the foam.

Sharing kitchen and editing space? Hmmm. If the van will be your home away from home and used day and night for food prep, washing up, & sleeping, you need to devote more space to the kitchen. If you already know the van is only for day trips and snacking, then editing in the back corner may work. But it seems like you have both sides of the center for storage and ‘hanging out’, and just the back corner for life tasks and working. I don’t understand your space planning. Your renovation has come so far and looks amazing!
Simple split, living/sleeping area and work/cooking area! When I don’t run the risk of freezing new pipes I’ll run new plumbing etc but for now getting it watertight is key.
Looking really good! Is your cooking/work station going to be big (deep) enough to really work at? Great that it’s in front of that window. When will you repair/replace the bathroom vent that won’t close?
It’ll be mainly for a laptop to work at with a nice window view. And I have temporarily ziptied the rear skylight to avoid any damage! It needs the mechanicals in adjusting but I didn’t have time!
