When i pick onions or garlic for freeze drying, I cut and use the green tops separately. After freeze drying, I then powder them. Oh my wonders! What a lovely taste for flavoring food!
I have a very fond memory circa 1970 when we were coming back from visiting my grandfather in Wallowa and we were stuck in a traffic jam on I-84. My parents knew we had just passed a tractor trailer carrying Walla Walla Sweet onions. So Mom took the wheel and Dad ran back to get onions. Of course the traffic started moving and my brother and I thought Dad wouldn’t catch up with us but he did. There he was, running up the highway with onions on his shoulder. He was magnificent. And so were those onions.

Something that I learned is that if you see any moisture, just take the lids off the jars and set them all in the oven on extreme low which is about 125 degrees. That way I don't have to use the dehydrator which usually is already in use. Nice video which I shared. I usually leave them in the oven for a couple or 3 hours, turn off the oven and come back later to reseal. I live very close to Walla Walla and the Sweets are a great onion! Thanks.

The grocery stores used to be full of them for that lovely 3 week period they were on. A think slice of Walla Walla Sweets on a hamburger is delish! Hi, Pam. I just watched your dehydrating Walla Walla onions, and FYI, it is far easier to peel an onion if you cut it in half first. I noticed that you peeled the whole onions, then cut it in half. I just got 16# of onions from the store to dehydrate and vacuum seal. Thank-you! I listened to another person saying they had to be blanched for 30 seconds in order to reconstitute correctly, but I know you know your stuff, so I'm copying what you do!! I've got 60 lbs of Walla Wallas sitting on my kitchen counter. I ordered a second Nesco dehydrator which is due to arrive today. There are some foods I prefer the freeze drier & some I like better dehydrated. Onions I prefer dehydrated unless I plan to make onion powder. I stopped by today because I have a massive quantity of various squash given to me & I have no idea how to preserve it. So your channel was my first stop. Unfortunately my ADHD kicked in & I just had to stop to watch this video. 😂
I just dried 50 pounds of Egyptian walking onions that I let overwinter in my garden. This gave me 4 quarts of dried onions for FREE. I will powder some to use as onion powder. I will use them in freezer meals, crockpot meals, and soup mixes. I have also dried walla walla onions.. delicious. I also dried the greens from my Egyptian walking onions which gave me 4 pints of dried greens.

OMG! I don't know what I did, but I love it! I dehydrated 5 trays of sweet onions (not Walla Walla). I thought they would maybe dehydrate quicker if I dehydrated them and didn't put them on the pierced tray. I cut them large enough that they wouldn't slip through. I dehydrated at 145. It still took nearly 24 hours. They turned out carmel color and taste like onion rings! I can't keep from snacking on them. Oh....I will use the pierced tray in the future. They stuck and it was a chore getting them loose.
Wow! 10 large onions dehydrated down to two quart jars. Those onions were beautiful. We don't get any of those Walla Walla onions here in Central Texas. I'm still learning, Tfs. ❤

I grow several hundred Walla Walla's a year. I both freeze dry and dehydrate them. the dehydrated ones are left on till very crunchy. My friends call them 'onion candy' yummy!

I use to live in Walla Walla. Went there in July, only found ONE roadside stand going in town from and NONE going out of town toward Milton -Freewater. So disappointed I had to buy them a Safeway in Milton Freewater.

Can you use parchment paper on the racks? Before buying a dehydrator my Emeril Lagasee airfryer has a setting for dehydrating - thought I would give that a try before purchasing a dehydrator. Talked myself out of a freeze dryer - as I'm 76 years old and won't likely be alive in 20 years.

So I have been dehydrating for a few years now, but decided to just see if you do it differently. Only difference is size, and I may just try the bigger size. I wanted to ask you, have you ever let them go longer in the dehydrator to the point some turn extra brown and even a few dark dark almost black? I first did it in error, thought it could use 6 more hours, went to bed and when I got up and checked I thought I had ruined them, but it ended up being a great mistake. It gives your dehydrated onions more like you had brown or crystallized them. The flavor was awesome! Just a tip I learned from a mistake. LOL

I'm assuming you take all the trimmings and make onion stock, right? ;) I used to have a dehydrator years ago, but it was one of those you had to rotate the trays on, seemingly every couple hours. Too much kerfuffle for me! I'm going to be ordering myself a Magic Mill dehydrator and hopefully will be back to the dehydrating game soon! Also, I've started switching to glass jars for all my dry goods. I started using empty soda bottles, 16.9oz, but the other day I was getting some chickpeas and noticed a chewed hole in one of the bottles! Naughty mousies! So, now I'll be getting quart canning jars to store in. I've discovered that two quart jars can hold about 3 to 3.5 of those 16.9 oz soda bottles (about 3.5 for rice and 3 for chickpeas), so it'll save space as well. Thank you for all the work you do for us followers!
Pam and Jim, what do you use to remove the onion odors from your dehydrator trays? I have heard some preppers say you should have a dedicated set of tray liners just for onions and garlic. Please let us know. Thanks for your useful videos.
No need to use a desiccant if you are also going to vacuum seal or use an O2 absorber. If you won't be using either of those and you live in a humid area, then yes.
Joanne: Yes, it would be a lot faster and it could be that the items you want to dehydrate may get so dried-out and brittle that that would be useless. Either way, we need to check our items on a regular basis to assess whether they meet our desired or expected specifications. Jim
@@RoseRedHomestead I recently learned to first lay a butter knife on top of the lid edge . Then use the can opener to put pressure on the knife when lifting the lid. It prevents the lid from getting bent.
I dehydrated vidalia onions and it took forever. I cut them up and separated them like you did in your video, and little by little some dried andi took them out. I did this a number of times over more than a 24 hour period. At the end, some were still "gummy" . I had the dehydrator set at about 138, by the end I turned it up to 145. It's a new dehydrator, a Broad and Taylor Sahara, wasn't cheap. Also kind of the same with some strawberries. What am I doing wrong???
I was just referred to your page and am binge watching everything! This might be a dumb question, but with dehydrating food you can use a lid you have already used? But when canning with water bath or pressure you cannot? Can you use the sealing attachment when storing food? Thank you!

Rose what happens if you miss one that is a little bit wet in the jar and you don't catch seeing the condensation? Will it spoil the rest? Will it create botulism?

We have not grown Walla Walla onions, but have but have grown other sweet onions. The only time we can get Walla Walla's in when they are in season. Are there other other sweet onions that you can buy? I did a Google search for Walla Walla Onion Distributors and there are a lot of sellers, including Amazon, Gurney's Seed and Nursery Co., and Azure Standard. Jim
I have been wondering why my onions dissappear when i cook onions in my pressure cooker you just pointed out they are mostly water and this is probably why they dissappear
Any question is a good question! LOL. Certainly there are degrees of dryness that can be achieved in dehydrating foods. I like a leathery feel for fruits that I am going to eat like a snack. For veggies like onions that I am going to be tossing into soups and stews, I like them very dry so they will store for a long time. The onion smell does not stick around in my dehydrator.
I'm wondering when you go to use the onions, is there a rule of thumb about how much onion to use? I know there were 10 onions to start with, so say you were seasoning spaghetti (just an example), would you use a tablespoon, 1/4 cup, a handful of onion? Just trying to gage how much of the dried onion you would use (if that makes sense)?
I too am a red head (yes, we are delicate flowers - ha! ha!) although I have never heard of Walla Walla I usually target sweet or Vadilla onions and never had a tearful moment cutting onions. Been thinking about getting a dehydrator and this was a great video. What type of dehydrator do you have ... do you have a preference of style/manufacturer?
The jar attachment to my vacuum sealer was a Food Saver, but no one can find them anymore. I think they only come now as part of the package when you buy certain Food Saver machines.
What room do you dehydrate these in? I’ve heard people say that when they dehydrated onions it stinks up their house so bad and the stink does not go away. Do you find this to be so? 💕
We dehydrate in the kitchen eating room. The house does smell like onions while the process is going on, but it fades by the next day. BYW--we have made the celery powder video and it will be released soon!

Living in South Carolina, of course we are close to Georgia, and we buy Vidalia onions. I have never dehydrated them but I will do some posthaste!

Slicing in half after removing the ends allows you to peel them without sacrafising layers, because you can see each layer in cross section.

I used to have a dehydrator years ago, but it was one of those you had to rotate the trays on, seemingly every couple hours. Too much kerfuffle for me! I'm going to be ordering myself a Magic Mill dehydrator and hopefully will be back to the dehydrating game soon!
Also, I've started switching to glass jars for all my dry goods. I started using empty soda bottles, 16.9oz, but the other day I was getting some chickpeas and noticed a chewed hole in one of the bottles! Naughty mousies! So, now I'll be getting quart canning jars to store in. I've discovered that two quart jars can hold about 3 to 3.5 of those 16.9 oz soda bottles (about 3.5 for rice and 3 for chickpeas), so it'll save space as well.

Probably freeze dried, but I still do them both ways.

Should you put moisture absorbers in your dehydrated foods.
No need to use a desiccant if you are also going to vacuum seal or use an O2 absorber. If you won't be using either of those and you live in a humid area, then yes.
I just love your channel! My question today is why wouldn't you just dehydrate everything on the highest heat? Wouldn't it be a lot faster?
Joanne: Yes, it would be a lot faster and it could be that the items you want to dehydrate may get so dried-out and brittle that that would be useless. Either way, we need to check our items on a regular basis to assess whether they meet our desired or expected specifications. Jim
To preserve color on certain items, dehydrate on a lower temperature but will take longer. Lemons, oranges, peppers etc.

I can pop those lids off with my fingers, or I just use the other end of a punch can opener made for opening canning jar lids.

@@RoseRedHomestead I recently learned to first lay a butter knife on top of the lid edge . Then use the can opener to put pressure on the knife when lifting the lid. It prevents the lid from getting bent.
I dehydrated vidalia onions and it took forever. I cut them up and separated them like you did in your video, and little by little some dried andi took them out. I did this a number of times over more than a 24 hour period. At the end, some were still "gummy" . I had the dehydrator set at about 138, by the end I turned it up to 145. It's a new dehydrator, a Broad and Taylor Sahara, wasn't cheap. Also kind of the same with some strawberries. What am I doing wrong???
The Vidalias are super moist. Full of moisture. So, probably not doing anything wrong, you just have to leave them in longer at higher temp.
I was just referred to your page and am binge watching everything! This might be a dumb question, but with dehydrating food you can use a lid you have already used? But when canning with water bath or pressure you cannot? Can you use the sealing attachment when storing food? Thank you!

Rose what happens if you miss one that is a little bit wet in the jar and you don't catch seeing the condensation? Will it spoil the rest? Will it create botulism?
Thank you for the great video. I am new to dehydrating. Can you caramelize the onions in a crock pot before dehydrating and still have them be safe? I can't find anything on the usda website in regards to this.
I don't see why not. I think I would dehydrate them first, then rehydrate them and caramelize. Try it!

We don't get those onions here in Connecticut
We have not grown Walla Walla onions, but have but have grown other sweet onions. The only time we can get Walla Walla's in when they are in season. Are there other other sweet onions that you can buy? I did a Google search for Walla Walla Onion Distributors and there are a lot of sellers, including Amazon, Gurney's Seed and Nursery Co., and Azure Standard. Jim

Can you cook the onions first and then dehydrate the cooked onions?
I have been wondering why my onions dissappear when i cook onions in my pressure cooker you just pointed out they are mostly water and this is probably why they dissappear

Good morning! This may sound like a novice question, but , can you over dry your onions/vegetables? Does the onion smell stay on or in you dehydrator?
Any question is a good question! LOL. Certainly there are degrees of dryness that can be achieved in dehydrating foods. I like a leathery feel for fruits that I am going to eat like a snack. For veggies like onions that I am going to be tossing into soups and stews, I like them very dry so they will store for a long time. The onion smell does not stick around in my dehydrator.

I'm wondering when you go to use the onions, is there a rule of thumb about how much onion to use? I know there were 10 onions to start with, so say you were seasoning spaghetti (just an example), would you use a tablespoon, 1/4 cup, a handful of onion? Just trying to gage how much of the dried onion you would use (if that makes sense)?
I do it by visual estimation. And sometimes just toss in a handful! I am not very methodical with that, am I! LOL

I too am a red head (yes, we are delicate flowers - ha! ha!) although I have never heard of Walla Walla I usually target sweet or Vadilla onions and never had a tearful moment cutting onions. Been thinking about getting a dehydrator and this was a great video. What type of dehydrator do you have ... do you have a preference of style/manufacturer?

Any variety of sweet onion is great--I lived near Walla Walla for a time, which explains my preference.

The jar attachment to my vacuum sealer was a Food Saver, but no one can find them anymore. I think they only come now as part of the package when you buy certain Food Saver machines.

What room do you dehydrate these in? I’ve heard people say that when they dehydrated onions it stinks up their house so bad and the stink does not go away. Do you find this to be so? 💕
We dehydrate in the kitchen eating room. The house does smell like onions while the process is going on, but it fades by the next day. BYW--we have made the celery powder video and it will be released soon!

Oh, gosh, that is the loveliest smell. But, like a freshly cut Christmas tree, the fragrance dissipates too quickly.
