    Hey Becky. Quick pro tip for spoons and tasting... You only need two. Dip one into the product and drizzle/drop the food into the spoon that will go into your mouth. Learned that working in a professional kitchen and it beats using all the spoons in your drawer every time you cook! Love your channel. Keep on growing and cooking and sharing in your effervescent, authentic way!

      Great tip, I do that too or drip off the spatula. Do you do that at home though? I’m not so particular when I’m tasting food that’s cooking cause it’s already boiling.

    I just have a word of caution about feeding large numbers of apples to your chickens. About five years ago, I fed all my bright red crabapples to my flock, thinking I was doing them such a favour with all the vitamins. After chicken number five died, I started getting worried and sent dead chicken #6 to the provincial lab for testing. The test results came back - cyanide crystals in the kidneys, caused by the apple seeds turning to cyanide in the digestive system. Symptoms were lethargic chickens, decreased appetite and activity and then death. I still give my chickens apples, but I cut the core out to avoid the seeds. FYI

    Just found out a "ChiveHack"
    In an earlier video you talked about that chives was difficult to dry.
    I just found out why!
    The hack is to cut them in small pieces and then put them in to the freezer in a freezerbag.
    After they have been frozen the cellular structure changes and now you can pour them on the freezer trays and then mix them to powder when they are really dry and a bit warm.
    They dries really quickly after they have been frozen and the colour is really good looking online a bit pale.
    They taste even more amazing and makes your Ranch powder taste amazing.

      I dry my chives straight from the garden, chop into small pieces. Then straight into the oven or dehydrator

    So many people have already said it, but your channel and this community is so positive and encouraging. This is my favorite channel right now. Becky, you’ve motivated me to be more creative and to be a doer, especially in the kitchen! My family deserves the best side of me, and you’ve inspired me to deliver my best at home. I’ve never been a baker, but I went on a bender and in the the span of two weeks, I made two loaves of homemade bread, mini pumpkin pie, apple pie, chicken pot pie, banana bread, preserved some onions, peppers and kale, and more. Your energy and attitude are contagious!

    I saw you use that juicer a few videos ago and told my husband about it. Well he surprised me with it and I ended up throwing a bunch of Concord grapes in and made my own juice. Oh my gosh is it good!

    🇯🇲 here, that travels offer. FYI: you are allowed to carry dried nutmeg because there are no longer an agricultural risk- so custom allows it.
    so fun hearing you talking about it. And yes, we like whole nutmeg. Sounds like such a fun trip.

    Hello. I am a new subscriber. I don't know if anyone has ever mentioned this to you or if you have thought about it but you can core your tomatoes and put them in your steam juicer. It will remove all excess water from them, then the pulp that is left you can either be put through a mill to remove skin & seeds or you can immersion blend it. It comes out as a beautiful thick sauce that doesn't have to be cooked for hours to remove excess water.

    When my mom is steaming tamales, she puts a couple of coins on the bottom of the pan. This is in case she accidentally allows all the water to evaporate, you’ll hear the coins start hopping around the bottom of the pot!

    The shell of the nutmeg is called Mace and it's also a spice 😍 can be used for all kinds of baking and cooking. It has an almost sweeter smell to it.

    Add a few teaspoons of butter in your pies, they taste so much better......(unless you do and I didn't see it).....Also I know everyone does things different but my Grandma which was known for her cleaning, being a laundress, food, baking, cooking, always brushed the tops with egg, then sprinkled a tiny bit of sugar on top her pies, it gave it a crunchy sugary layer on the crust . She could cook, bake anything and she would cook for neighbors...people bought her pies, noodles, rolls, cookies, fruitcake, so many things. I was so blessed to learn to cook and clean by her (my Nonna) and my other Grandma...... now I'm wanting an apple pie. Maybe I should start a channel...... Cooking, baking, cleaning

    I've been processing apples myself and I have learned from past experience that I sort the apples and the pristine ones go into my second fridge and can last a little bit and I have to process sooner rather than later the ones that have bug bites or blemishes. Don't beat yourself up about it. I think we have ALL had to learn that lesson. I am just in awe how much you do get done, so kudos to you! You're doing great :D

    You get so much done and have so much energy. I've made a bunch of the freezer meals you've posted and can I say...Yum! My youngest son doesn't care for pumpkin but loved the sausage and pumpkin pasta bake. Most of what we've tried will be kept in the rotation. I follow Jennifer at A Country Life as well and just bought her cookbook. You've bot inspired me to expand even more. Thank you!

    Totally fine to bring back spices. It's live plants / cut flowers they question to prevent invasive species and bugs. I have family in the Caribbean and we have nutmeg trees. Fun fact. The red webbing on the outside of the nutmeg is dried and is known as mace.

    From a long time gardener/farming family, no matter how organized I try to be, and how many years I've been doing it, any time I work with large quantities of produce or have massive harvests of a few things at one time, I will always lose some due to time. It happens. I always feel guilty but it happens to the most experienced of us so try not to feel bad! You are doing amazing! We have the best of intentions but sometimes life just gets in the way...and sometimes our gardens get in the way of our own gardens! There is never enough time in a day!

    We used to make apple sauce with skins on and often with cores in but seeds removed - in the big turkey roaster using the oven and a Foley food mill.. When apples ripened, we would quarter or 1/6th them, remove the seeds, cut off any bruised or bad spots, decide about the cores, indiscriminately toss them in a plastic bag (usually a department store sized), then toss in the freezer for "later". Depending upon what else was going on, some would be sliced, have the lemon juice and seasoning added as called for in a pie recipie, then placed in a labeled bag for use in a pie or other dish during the winter. In terms of actually making apple sauce, most often later occurred when the freezer space was needed amd we typically cooked down two turkey roasters full over the course of one or two days before canning or freezing. If canning, as soon as the hot batch 2as milled, the previous roasters worth was added, mixed, moderate,y spiced, and the pot was brought back up to plopping hot. Final,space, sugsr added depending upon who was taste testing (less when freezing than canning), and all was added to hot jars with hot lids. If making apple butter, the cores were left in, more spices were added, more sugar was added, some lemon juice was added, amd the mixture was reduced with stirring in the stove before being jarred up. We generally had an old school lower sugar looser butter than some began to have; especially looser than those who used pectin.

    You didn’t waste the apples, the chickens are getting them. Yes give yourself grace there is a lot to do on your homestead mostly by yourself. You do a great job ! I used to own an acre and it was lots of work. I also worked full time. I sold the home on an acre and really miss the lifestyle. I. Now 72 and realize my limits. I do a little canning and preserving. I watch all your videos.

    Becky I watch you often you are very interesting I have had that juicer for thirty years. I have not used it for apples but grapes every year. The juice of Concord grapes makes the best jelly ever and we also drink it either watered down or with ginger ale you can make wine too. Thanks for inviting us into your kitchen . I hope you succeed in getting more people into their own kitchens.

    You are truly blessed with family that comes to help you and you bless them with all the goodies they get to take home. Your niece was just precious and such a good girl while her mom worked getting them apples peeled. Becky, sometimes a harvest is just so much it’s hard to get it all processed before it started to go bad. It just happens, so don’t feel bad. At least you have chickens to feed them to, so really they didn’t go to waste. Your pies came out beautifully! Thank you for sharing!

    The outer shell of nutmeg is actually another spice called "mace". It is a pepper/hot flavor. Try it in chili!

    I used to smash my garlic to peel it as well, but a trick that I learned for peeling mass quantities of garlic is to put the cloves into a stainless steel bowl, use another stainless steel bowl flipped upside down (lip edge to lip edge) and shake like crazy. The peel comes off the garlic. I just pick out the cloves, toss the garlic shells left behind and do the next batch. I tried it with 2 pots and it works just as well. A pot with the lid did not work for some reason... so stainless steel to stainless steel is the key!

      Great idea, I hate getting the garlic smell on my hands, it lasts for days. This sounds like it’d help with that. I think Becky smashes them on purpose to release the health properties of the garlic….I can’t remember which video she explained it in :)

    My husband and kids bought me a pear, apple, fig, and weeping willow tree for my birthday this passed weekend and put them in the ground. I know they wont bear fruit for a few years, but I am so excited to add them to my questionable orange and lemon tree! I can hardly wait for my first harvest and preservation attempt!

      I know they are already planted and you did your research on where to best place them, but if someone doesn't know...Willows have a very invasive root system, so best not to plant near underground utilities, sewer pipes, etc. Great on creek banks or somewhere you are experiencing erosion. A little tip on the steamer. I put 3 marbles in the bottom with my water. When I hear them moving around. I know the water is getting to low an it is time to add more water. Keep up the good work!!

    You can use the tomatillo skins as a tea! Just rinse them and steep them for a few minutes. Great if you have a cold or cough.

    This year, our apples didn't have much juice so we ran the steamed pulp through a food strainer. It was so thick and luscious, we turned it into apple butter. It is delicious!!!

I don't have enough space to have a garden but I've asked my neighbour if I could use some of the ground that he doesn't use for my vegetable garden and he said yes so I'm going to have some fresh vegetables next year 😊 just for the record, I'm not a native English speaker so forgive me the mistakes I make.

    Hi Becky, I have watched your videos you have said that you hate pealing garlic, and I do too. I was watching Chef Jean Pierre on UA-cam and he gave a tip to soak your cloves in warm water and they will peal off much easier. I did this the last time I harvested a ton of garlic and what a game changer. I normally do it myself and it can take me hours because of the amount I do. Soaking it in warm water saved me hours. I did 50 heads of garlic and it took me approximately an hour or so. The skins soften and peel right off. I also use a paring knife and that helped the ones that were still being stubborn. When you peel the garlic do it in the warm water and it will not be sticky. Just thought I would share this tip with you and others.

    I love watching your videos. Brings back lots of good memories. I've had 🐔 and ducks and pigs and goats and rabbits. Nearly always have had gardens. I'm now retired and live in a small apt. No ground to garden in so now I do it hydroponically in my bedroom. Greens and tomatoes and some herbs. Love seeing your smiling face.

    You inspired me to pull out apricots that I had cleaned & pitted and tossed in my freezer this summer because I didn't want to do anything with them at the time. They are now in my steam juicer. I have not used it for about 30 years. Fortunately the tubing is still very good. Keep up the great work. I just wish I had your energy now!

    I’m glad you gave yourself grace over the apples. The chickens are going to love the worms in them. When I lived on the west coast, we had a winter apple tree. I layered them with newspapers in cardboard boxes right by my kitchen door. We had apples for the kids’ lunches all winter!

    Becky, I would LOVE to know how you keep inventory of what you have! How you keep track of what you use/give to family and friends. I’ve never found a good way to do this but it seems like you never run out of anything and always know what you have! 💚

    I enjoy watching your harvest and then the process all the bounty. I had a small garden that didn’t do great, but friends have been giving me tomatoes and peppers. I have been cooking tomatoes, peppers and onions down for spaghetti sauce and salsa. Can’t wait to see what you do next. I also enjoyed your large freezer meals, it gave me some great recipe ideas to use. Thanks for sharing. Blessings

    I love you and your channel! I bought a pressure canner & steam juicer. I'm excited to try them. Hubby won't be thrilled lol, but after I make him some cider, he'll chill out. 😉 I'm old, 54, and I can remember canning and picking vegetables from my grandma's garden, eating all the raw peas I could. I still do that. Watching your channel reminds me of that time with her. Also, it's renewed my desire for preserving more of our food. I'm going to have to do it via the supermarket for now. But, I'll have my garden again next year.
    Also, you'll have to tell me where you got those gorgeous peaches. I actually live not far from you. I'm on the long beach peninsula. It's gorgeous here. 💜💜💜💜 Anyway, thank you for teaching an old dog new tricks!!!!

Side note, apple seeds have cyanide and are poisonous to chickens. In small amounts they're harmless, but just something to be aware of if you're feeding a bunch!

    Hi Becky. I just wanted to tell you that I love your channel although I live in a very small apartment in the middle of a city. Regarding nutmeg, its exterior layer is called “macis” (at least here in Spain is called that way) and it is a very fine spice on its own. It is sold separately at a very high price here. XOXO

    Hello, Becky, I have a tip/recipe(?) for the dried apple slices. While they are delicious on their own, they are even better this way: chop them into cubes of roughly 1*1cm, melt any kind of chocolate you like, pour over the cubes, mix, then put little spoonfuls of the stuff on parchment paper. Wait till solid, voila.

    Cook those cores and peel and make apple jelly. Then feed the scrapes to your chickens. Loved seeing Abigail and Gizmo.

    Hi Becky! Just started watching a little late, but catching up. Before I forget, I'm really glad you mentioned Jennifer @ A Country Life. I really like her channel & was subscribed a while back, but until today, hadn't realized I had been unaubscribed! That's been happening a lot for the last several months somehow. I've been really short on time lately, so haven't been able to go looking for some of m "missing" channels. So I really appreciate it when the you tube channels I do get to watch mention some of their favorites. Glad to see your sister & neice with you today!

      @@lunayahwitch Yes it is. Really a nice channel. I've had several channels disappear on me recently. They don't seem to always go off my subscription list at the bottom of the page which seems weird to me, but I always go check out any channels that are suggested in a video from my subscribed channels & have found great channels I haven't watched before but I've also found channels like A COUNTRY LIFE and resubscribed. When I resubscribe, I try to mention having been UNsubscribed in case they've noticed a change in their numbers & weren't sure why. Have a great weekend!

    A tip for you! When you need to peel lots of garlic, put it into a bowl, put another bowl on top and shake it pretty hard! The peels all come off and the clove remains whole :)
