- I thought for sure I was never going to be able to have a tuna fish sandwich when camping, hiking, traveling or fighting zombies. GOOD NEWS! I tried to freeze dry a tuna fish sandwich and it works perfectly. I tried freeze dried tuna sandwiches two ways because we all know that mayonnaise does not freeze dry. I tried substituting the mayo with plain yogurt (not Greek yogurt). It rehydrated great and satisfied my craving but...… it was still lacking just a little. I made my second freeze dried tuna fish sandwich by leaving out the mayo in my recipe. Since some forms of mayo do not need to be refrigerated, i rehydrated with a little water and a little mayo and just to turn it up a notch, I rehydrated another with chipotle mayo. BAM! It was perfect! Now I have a new traveling food that curbs my craving!

Re: longer freeze drying times in hot and humid climates - we live in Texas so hot and humid is an unavoidable fact life. Originally put my machine in the garage but after the first 2 uses I could tell that was not gonna work as soon as spring/summer in Texas hit. AND it wasn't near as loud as I thought it would be. Thankfully, I have an extra bedroom and bathroom that is now a very large storage pantry that includes space for my freeze dryer (and 2 rolling carts) and my dehydrator as well. Freeze drying times were instantly shorter once moved it into the house - and that was in early March before the heat really hit. Currently experiencing the brutal heat and humidity that we normally get in August and September and my freeze drying times rarely go over 28-30 hours.
It is quiet enough that I would have made room for it in the laundry room right off the kitchen if I didn't have the extra bedroom and bath space.
I make tuna with avocado instead of mayo. It's amazing!
I swap mayo with avocado in lots of things but I have never doen that with tuna salad, that's a great idea.... Thanks!

@@linasun0210 I ordered April 1. They told me 2-3 weeks so at least they are more accurately telling customers. I kept asking my sales representative and he kept telling me it would ship in the next couple days. I got quite frustrated. Now that I actually have it I will say it is worth the wait!
@@linasun0210 I think a lot of people started prepping as soon as stories of fertilizer shortages and food shortages started coming out. Harvest Right probably got overwhelmed with orders

Ok, I know this sounds gross, but stick with me here. I make a tuna sandwich with cottage cheese instead of mayo. It's so much better than it sounds. Since cottage cheese freeze dries easily, this should work!

If you ever have problems with the lids...here is a life savers. Run cover under hot water! The cover then just snapshot on without any problem.

I saw one guy using Cream Cheese in place of Mayo, that may be another option.

We just freeze dry a mix of celery and those Grillo dill pickles with all the spices and plenty of pepper. Then it's ready to combine with the other ingredients when we need a quick lunch or are camping.

We use a very similar "camera mount" lol. Our unit is in an air conditioned shed on the patio and the wifi camera is invaluable. We can check it through the cloud wherever we are.
Mine saves me from walking up and down the stairs 30 times😂
Do you have an estimate of how long the freeze-dried tuna will last? 1 year, 2 years or more?
I was going to start searching to see if anyone had freeze dried tuna. I don't want to do a sandwich I'm looking more for freeze drying it by the entire can. Protein may be hard to come by in our future. Thanks for doing the homework to make it easier to freeze dry.
I have taken raw tuna steaks and sliced them 1/4" thick and they freeze dried well. I freeze dry all seafood raw as it rehydrates perectly. You could probably freeze dry plain tuna fish. It lets you use it in different ways.
I’ve been hesitant to try tuna because I figured the smell would be a little overwhelming. How long did it take to air out the tuna smell?

Love your channel. Here is a challenge for you. I would like to know if I can reuse commercially bought glass jars with their original lids for freeze-dried foods? Supposing of course that the jar and the lid are in good condition. I know that I can’t for canning. But my thought was that freeze drying process does not have the same types of physics involved mainly high pressure on the glass, and it would be a great way for me to cut down on some food storage costs. And a secondary question would be… Are there food absorber packets that change color based on viability?
I have successfully reused glass jars with their original "pop top" lids from pickles, olives, mezzetta peppers, spaghetti sauce (Classico), etc. I vacuum seal them with my Food Saver the same as I do for Ball quart jars. I don't use the FD or the separate vacuum sealer that Brian does.
2nd question: Yes, on Amazon you can order food grade dessicant moisture absorbers. I get the brand that has orange colored beads that change to green when they are "used". but they can be recharged in the oven.

Have you tried freeze drying salad or spreads made with Miracle Whip type dressing instead of mayo? Does Miracle Whip freeze dry? I think it has less oil than mayo.

This might be a stupid Q but would the dried pita bread chip expand in your stomach? I only have half a stomach so wonder if it would puff up absorbing moisture?
have you just done tuna freeze dried with nothing else? if so how does it work out?
I just got done freeze drying tuna (in water). I just drained it, and pre froze it. It took about 24 hours. Don't fill the trays to full. I did. I had no issue with smell either. When I first opened the door there was a smell but it didn't stay.
Just found giant containers of plain yogurt for .49/each. I have giant cans of tuna in storage. Going to do a load of this in my FD!

Have you tried using avocado to replace the Mayo or yogurt? That is how I eat my tuna sandwiches normally.
Yes! That's a nice replacement as well. If you freeze dry avocado, use something with an acid such as lemon juice with it or you will get browning

I am trying to make it by freeze-drying beef meat or organ meats and encapsulating them similarly to what is sold online. How would you make it? Would you blend it, then freeze-dry it or freeze-dry it and then blend it?
I would probably blend, fd then blens again for consistency
Did it really take 15 hours for the bread to rehydrate? That seems like a long time.
So let's keep in mind, while the mayonnaise itself won't freeze dry, all of the components except the oil WILL freeze dry beautifully. And most prepers have a preferred oil storage method.
I think it would be a better solution to even steal a packet with the dry ingredients and call out the amount of water (by weight) to reconstitute them, then add the oil.
Love most of the techniques and stuff, but the idea of surviving on tuna and yogurt makes me question how much I really want to live.

I keep seeing conflicting information on whether or not the medium HR freeze dryer needs to be on a 20 amp outlet. Does anyone have theirs on a regular 110, and if so, have you had problems with it?

As usual great video … I love my freeze dryer … I’ve had it 3 years now … I’ve freeze dried lots of my home cooked meals .. and experimented with other foods … but I’ve not tried tuna .. I will give that a whirl .. Again thank you !!

So, I'm new to this... and I know you're not supposed to do this with mayo because oils... but like, what if I did anyway? I mean obviously it won't shelf for 20 years cause the oils would go rancid... but what if I do some with mayo and then eat it in 6 months?... I would LOVE IT if we could see some content addressing the reasons why not to do things and the consequences of doing it anyway...
I mean Harvest Right specifically says not to do foods high in sugar and yet freeze dried skittles are all the rage right now...
So... can you do some videos where you're "breaking the rules" but explaining why they are the rules in the first place?...

Meat is my biggest freeze drying concern. If done properly, its usually good for the long haul. If its not, it could make you very sick

For some people like myself, it comes down to space. I have the space for it but in order for me to not be overwhelmed with a crap ton of can, #10 cans at that, it's easier for me to FD it/them.
